I have a few questions that I have been curious about and I can't seem to find an answer to.

1. If I buy the Kraft Minute Tapioca, can I use that for Tapioca starch, or are they totally different things?

2. Is pure natural vanilla from Mexico gluten-free?? I have a HUGE bottle and I hate using the "fake" vanilla.

3. When we walk down the cooking isle where all the flour is, will we get glutened?? I know I can smell the flour, but I was just wondering if that is enough to make us sick. We have to go down there, so I don't know how to get around that.

4. Is cream cheese gluten-free?

Thanks for all your help!! I will figure this all out one day, I hope!

1. I am not sure what the sub would be, as I only use Tapioca flour/starch.

2. Does it just say 'vanilla'? I am not sure - they might have added something. Does it list anything?

3. Is it flying around? You have to injest it. I'm sure you're fine. I've never been glutened that way - be careful picking up bags of flour beside gluten ones - sometimes they leak.

4. Yes, but I don't know what brands, as I am casein free.

1. No, Minute Tapioca is not a substitute for tapioca starch. Tapioca starch is a fine white powder, much like cornstarch in texture. Minute tapioca is small granules. It might be possible to grind the minute tapioca in a flour mill in order to make tapioca starch, but I think it would probably be much cheaper to buy the tapioca starch. Check oriental stores for cheap(er) tapioca starch.

2. The vanilla depends on the brand. Just the other day, though, I bought pure vanilla at costco (a Kirkland brand) and it said "gluten free" on the label. You might want to buy some vanilla that you know is gluten free, and give the stuff you are uncertain about to a neighbor or relative.

3. I don't think the smell of baking gluten will make you ill . . . I don't think smells contain proteins. (Someone else jump in and correct me if I'm wrong!)

4. Philadelphia cream cheese is owned by Kraft, which always labels their products clearly with the common names of gluten-containing ingredients. So if it doesn't say it, it doesn't have it. I believe that the Wal-Mart Great Value brand of cream cheese is also labeled as gluten free.

Keep on working at it . . . you'll soon have it all down!

      Hi,  My 7 year daughter has complained of this in the past, which I thought were part of her glutening symptom, but more recently I have come to figure out it's part of her histamine overload symptom. This one symptom was part of her broader profile, which included irritability, extreme hunger, confusion, post-nasal drip. You might want to look up "histamine intolerance". I wish I had known of this at the time of her diagnosis, life would have been much easier.  I hope you are able to figure out.

      My 5yo was diagnosed with celiac last year by being tested after his sister was diagnosed. We are very strict on the gluten-free diet, but unsure what his reactions are as he was diagnosed without many symptoms other than low ferritin.  He had a school party where his teacher made gluten-free gingerbread men. I almost said no because she made it in her kitchen but I thought it would be ok.  Next day and for a few after his behavior is awful. Hitting, rude, disrespectful. Mainly he kept saying his legs were shaking. Is this a gluten exposure symptom that anyone else gets? Also the bad behavior?

      Not necessarily. The "Gluten Free" label means not more than 20ppm of gluten in the product which is often not enough for super sensitive celiacs. You would need to be looking for "Certified Gluten Free" (GFCO endorsed) which means no more than 10ppm of gluten. Having said that, "Gluten Free" doesn't mean that there will necessarily be more gluten than "Certified Gluten" in any given batch run. It just means there could be.

      I think it is wise to seek a second opinion from a GI doc and to go on a gluten free diet in the meantime. The GI doc may look at all the evidence, including the biopsy report, and conclude you don't need anything else to reach a dx of celiac disease and so, there would be no need for a gluten challenge. But if the GI doc does want to do more testing, you can worry about the gluten challenge at that time. But between now and the time of the appointment, if your symptoms improve on a gluten free diet, that is more evidence. Just keep in mind that if a gluten challenge is called for, the bare minimum challenge length is two weeks of the daily consumption of at least 10g of gluten, which is about the amount found in 4-6 slices of wheat bread. But, I would count on giving it four weeks to be sure.
