Does Anyone Have A Millet Tortilla Shell Recipe ?

I'm craving tortilla chips and guacamole, but I can't have any corn, dairy, eggs or soy.

Does anyone have a recipe or any ideas on how to make these ?

I've been using potato chips, but it is getting old. :(

My guacamole recipe is : avocado, parsley, tomatoes, cilantro, onions, jalapeno, lime and lemon juice, and S & P

i make corn ones with 2 parts cornflour to 1 part water; perhaps it would work the same.

They make a rice tortillia that has no corn in it at all. "Food for life" is the brand, you can do a goolge search for it to find where to get it. Hope that helps curb your cravings!

The ingredients are:

Brown rice flour, filtered water, tapioca flour, safflower oil, rice bran, vegetable gum (xanthan, cellulose), sea salt.

Can you tell me how you cook them. What do you cook them in ? Temp ? And are those the only two ingredients ? No oil, salt ??

Thanks a lot. I'll look for those. I don't remember doing well with tapioca flour 9 months ago when I tested it, but there is only one way to tell for sure ...

I put about 1 c. water, 2 c. flour, a bit of salt. Mix together, let rest, then take a small ball and roll out. I pan 'fry' with a lightly oiled skillet until it turns a little brown. I'm sure a tortilla press would give better results but I dont have one. Good luck!

Well, the fried millet tortillas were yummy. Thanks for your help ...

My batter did not stick together well though, so I had to leave them 1/4 inch thick. I'm thinking it needs another ingredient to help bind it.

Maybe corn binds together better than millet.

And as for the baked tortilla shell, it is now in the freezer waiting to be used in stuffing or just thrown in the trash. :P

try adding some xan. gum next time, maybe? good luck! glad they were okay :)

I thought xanthan gum came from corn?

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
