Baking Gf With Egg Replacer?

Just for fun, I have an egg allergy as well as the recently dx'd gluten intolerance. Does anyone here know of the best egg replacer for baking?

I haven't baked in ages because, surprise, surpirse, baked goods always made me sick! Now I've discovered the gluten-free diet, life is good and belly is happy. So, I want to try some treats, etc. that I've not had in so long.

I bought some of gluten-free pantry's Truffle Brownie mix and made it according to the directions with the Ener-g egg replacer. It TASTES great, but is gooey in the middle, ok on the edges and it "flopped" in the center.

Any tips on how to do this?

Hi everone...just wanted to let you know that after posting the above message, I googled the subject and found an article on the Gluten Free Pantry site that specifically addressed it. They say that the Ener-g replacer does not work well in their brownie mix and gave instructions on what to use.

Forgive me for being (at least slightly) "off topic" from your original post. My son (8 years old) has similar blood work and also an egg allergy (cross-reactivity?).

I'm still trying to figure out what to do for him. His numbers are 126.2 IGG AGA, 22.2 IGA AGA, 17.9 IGA TTG. The gastro has *not* suggested gluten free. Though he has indicated that if my son's symptoms don't improve soon he'll do the endoscopy.

I want to stay with "conventional" medicine for him. I don't want to "just try a gluten-free diet" because I suspect reintroducing gluten would be long and difficult. Also I have some skepticism about Enterolab. He's a kid and I don't want to mess with his diet without solid reasons for doing so (I need the support of my husband, family, school, etc.)

My questions:

- what type of doctor diagnosed gluten sensitivity based on your bloodwork?

- what do you use to substitute for eggs in baked goods?

I'm confused -- is your son gluten-free now, and you don't want to do a challenge, or is he not gluten-free and you'd rather not go down that road without a dx?

Anyhow, my 11 yr old also is celiac and egg allergic. Egg replacer works fairly well in most things, but not all. The gluten-free pantry mixes usually have an alternate egg-free direction, and we've found amazing success with using (ready?) silken tofu!! The old-fashioned cookie mix, danielle's chocolate cake mix, and the Pamela's (brand) brownie mix all use 1/2C tofu instead of eggs. I just had a bday party where none of the kids knew the food was gluten-free -- one of my son's friends actually grabbed a cookie out of his hand to keep him from "eating food that will make you sick".

Other choices: Miss Roben's mixes have egg-free alternatives listed on the package, or you can use gluten-free double-acting aluminum-free baking powder. (it's poofier) I've seen recipes that use applesauce, or even unflavored gelatin/water.

A cookbook we use a lot: The Kid-Friendly Food Allergy Cookbook by Hammond and Rominger. It's a multiple allergy cookbook with substitution ideas as part of the recipes -- and if the recipe stinks egg-less, it says so and doesn't offer a substitute.

I haven't found a single great eggless bread recipe, though. And we really miss Kinnikinick donuts!

I have an egg allergy, too. When I do my baking, I use one tablespoon of ground flax, mixed in 3 tablespoons of hot water. Mix this up first, and let it thicken while you mix your other ingredients. It works very well for me in my baking.

I'm sorry if I wasn't clear. My son is not gluten-free yet. His blood work is inconclusive. The doctor has suggested a biopsy if he doesn't improve soon. So, I don't want him to go gluten free until after the biopsy. He is clearly allergic (IgE) to eggs. So we're egg free. But everything I've tried to bake without eggs has "flopped."

      I have increased my vitamin intake Vitamin B Complex plus 2 Thiamax, NeuroMag, Benfotiamine with breakfast. I continue reading and watching gluten free items that I eat. Breakfast is Bobs Redmill gluten-free oatmeal with Chobani zero sugar yogurt a banana and blueberries. Lunch since im at a deli gluten-free is hard to come by so I stick with turkey with gluten-free Promise bread. Dinner varies like gluten-free pasta, tacos, chicken, sausage, meat etc. rice or take out from gluten-free places. I have decided to stay away from gluten-free pizza as I feel I felt weird with it unless its store bought frozen. I am going to try to make my own gluten-free bread, Bagels. I have been good with baking gluten-free treats like cookies, muffins. Snacks if its not fruit, veggies I grab a protein bar or chocolate guilty pleasure reeses, hersheys, York PP. I am going to start to use my fitness pal app to track what I eat and note when I feel off to see if I can pinpoint if a trend of a certain gluten-free food is a culprit. I noticed once in a while I feel a little bloated, gassy that I think is from the pizza so I am going to avoid it and continue narrowing it down. I have been doing very well and I have learned even if you think you are doing everything 100% gluten-free eating it can sneak in without you knowing. This year is more traveling which im afraid of but have already looked into gluten-free places in Nashville which they have and back to Aruba I went last year and have the gluten-free places already selected. Most restaurants I have been to have been very helpful with what to stay away from to avoid CC. If a place states they don't have any gluten-free the I stick with a salad or when I took my kids to breakfast as much as I miss the breakfast this place serves I played it safe with yogurt and a fruit bowl so at least my kids were happy to go there again. Local farmers market has great gluten-free items that I treat myself to like different types of breads, baked goods. My journey continues...

      After waisted time of new care team, yet again EXHAUSTED saw new gi today in Modesto, though all my ailments im not getting any kind of concern of me being celiac and sentive to just about everything since menopause. Dr daid why don't I go see you guys because my blood shows zero for celiac. I told him im glutenfree since 1994 by colonoscopy with biopsy positive celiac sprue by GI.Its RIDICULOUS when im bringing in material from this site of knowledge as well as the autoimmune institute,and  there's zero interest on their part.Medical IS causing me depression.Im view as a disability chaser, IM STILL RECOVERING from being a bus driver that im still healing and having more issues, now I may have multiple sclerosis or meningioma. Ive reached out, wrote letters, NOT feeling well. This is inhumane.

      I was taking medicine for sibo but it was not agreeing with my stomach at all.Was on gabapentin but it amps me up.I was taking in morning because it wasn't allowing me to sleep.This has always been an issue with medicine and me.Even going to dentist, the good shot that numbs you once, I can't take because it makes my heart beat fast and I  get the shakes.I have to take the crappy stuff and get injected always more than 4 times always.Its infuriating

      I showed one doctor I went to once because completely clueless of celiac disease and yes that one was connected to a well known hospital and she said oh thats just a bunch of people that think they are celiac coming together. I said um no they have doctors and knowledge behind what is being written. So bay area is Downplaying this site! SADLY
