Chocolate Chip Banana Bran Muffins

These were my family's absolute favorite muffins. They were the reason for bananas. My kids go into the kitchen, see brown squishy bananas and get all excited. :lol: Anyway, it's the first thing I adapted when my diet changed. These are so good for you (because I just love to power pack things if I can) but don't taste it at all.

Let me know if you try these and how you like them!

Chocolate Chip Banana Bran Muffins

2 eggs

1/2 c brown sugar

1/3 cup milk

1 single serving NSA applesauce

2 tsps vanilla

2-3 med or 2 lg very ripe bananas, squished up :P

1/2 c flaxmeal

1/2 c soy flour**

1/2 c quinoa flour**

1/2 c corn flour**

1/2 tsp xanthan gum

2 tsps baking powder

1 tsp cinnamon

1/4 tsp salt

1/4 c mini chocolate chips

1/4 c milk chocolate chips (optional)

Preheat oven to 350.

Mix eggs with brown sugar till well mixed. Add milk, applesauce, vanilla, bananas and flaxmeal. Set aside.

Sift together flours, xanthan gum, baking powder, cinnamon, salt. Make a well in middle. Sprinkle chips over. Pour in wet ingredients and stir till just combined.

Spoon into oil sprayed muffin tins. Bake 27ish minutes. Let sit in tins 5 minutes. Remove and cool remainder of the way.

These keep well for about 3 days in plastic bags that are left open. Don't know why. Just do.

**you can substitute any flours you'd like for these, but these are the best combination I've tried so far, and I've tried MANY combinations. My second favorite combination is soy flour, chickpea flour and quinoa flour (but I ran out of chickpea flour yesterday and really like the corn now.) I've also used 1-1/2 cups Bob's Red Mill gluten-free flour mix with excellent results.

I have some overripe bananas... are they supposed to be in the recipe? :-)

:D hehe--i wrote this recipe out and reread it thinking i forgot the bananas too--i would prefer it without the bananas--i love anything with chocalate chips--deb :)

OMG! I cannot believe I overlooked the BANANAS in typing out that recipe. :blink:

YES! I will go back and actually add the bananas in, but for the rest of you...add:

2-3 med or 2 lg ripe bananas (all squished up) to the wet ingredients before you add the flaxmeal.

Omg...I really need a good excuse for that. Let me think... <_<

Okay, I also forgot to add a VARIATION: (I just made these last night. One of my kids likes these a lot.)

Chocolate Chip Pumpkin (Bran) Muffins

Substitute 1/2 can (about 1 cup) pumpkin for the bananas which are now in the original recipe. :lol:

      I do not know this, but since they are labelled gluten-free, and are not really a product that could easily be contaminated when making them (there would be not flour in the air of such a facility, for example), I don't really see contamination as something to be concerned about for this type of product.

      Thanks @Scott Adams. Do you know if Kirkland Signature supplements share facility and production lines with other products containing gluten?  I'm worried that I'll react to this brand just like I did with other gluten-free labelled supplement brands.

      This is a really common area of confusion. Most natural cheeses (cheddar, Swiss, mozzarella, Parmesan, brie, camembert, and most blue cheeses) are inherently gluten-free, and you’re right that the molds used today are typically grown on gluten-free media. The bigger risks tend to come from processed cheeses: shredded cheese (anti-caking agents), cheese spreads, beer-washed rinds, smoke-flavored cheeses, and anything with added seasonings or “natural flavors,” where cross-contact can happen. As for yeast, you’re also correct — yeast itself is gluten-free. The issue is the source: brewer’s yeast and yeast extracts can be derived from barley unless labeled gluten-free, while baker’s yeast is generally safe. When in doubt, sticking with whole, unprocessed cheeses and products specifically labeled gluten-free is the safest approach, especially if you’re highly sensitive.
