Anyone Have A Corndog Recipe? Or Onion Rings?

I know that they're not the healthiest goodies, but I've been dying for corn dogs or onion rings lately. Anyone have a gluten-free recipe for them?

Hmmm..... I don't have corn dog one yet, but I bet I can find one.

For my onion rings, my hubby likes em' pretty straight forward. I season dry rice flour with salt pepper and maybe a little garlic, then toss in the onions or shallots. Deep fry just until golden and yumm yumm. They don't have the thick batter, but I bet if that's what you are looking for you can just use a regular (rice flour) tempura batter (flour, baking powder, club soda, salt, pepper, mix till you have a thick batter, dip and fry till golden).

Do you have measurements for your tempura batter? I'm a fan of the onion rings with the thicker crisp coating. I definitely like the idea of adding a little garlic into it though.

Hmmm... I never really though about measurements, I'm kind of an eyeball it girl, but I'll give it a try. Just remember that your looking for a batter similar to pancake batter, maybe a bit thicker, so you can easily adjust the flour or soda depending on the thickness.

2 C rice flour

1 tsp baking powder

pinch salt & pepper

1/2 tsp garlic powder

1 C (maybe a little less or a little more) club soda, or water

Mix all dry ingredients and add soda and little at a time to make the thick batter. I usually let mine sit and rest for about 5 minutes to work out any air bubbles, then just dip and fry.

I hope the measurement are correct, but even if they are a little off it's pretty easy to adjust. I hope you like it!

I was wondering if you substituted corn flour (masa flour) for the rice flour in the tempura batter, and maybe added a bit more to make it thicker, would it work for the corn dogs? Or does it have to have other stuff mixed into it?

I do have a recipe for mini corn dogs, but I have not used it yet, and I have also not used any of the bean flours. but here it is:

Mini Corn Dogs

Ingredients:

1/4 cup garbanzo bean flour

1/4 cup white rice flour

1/2 cup yellow cornmeal

1/2 tsp xanthan gum

1/2 Tbsp sugar

1/2 tsp baking powder

1 egg, beaten

1 cup milk (or milk substitute)

gluten-free hot dogs

Directions:

Mix together the dry ingredients.

Add the egg and milk.

Cut hot dogs into three pieces each, dip into batter.

Make sure each piece is coated well.

Deep fry until golden brown.

I've used garbanzo bean flour in a handful of recipes. Mostly mixed with other flours to make breads...and they're pretty good. Nothing like those store bought breads. I also used it to make a biscuit mix that I used to make an "Impossible pie" I have 2 recipe books where the authors like bean flours.

I don't know where you're from, but I've found Garbanzo Bean Flour in the bulk health food section in my local Fred Meyer. It's much cheaper this way.

Dear GF4Life, :)

Last night I tried your recipe for mini-corn dogs. They were really very good.

A little hard to cover the entire hot dog with the batter, but very good. I think that it would have been easier to cover them if the batter was a tad bit thinner, so next time I'll try it with a little more milk.

hi , a suggestion . in the mall a few years back they did an awesome corn dog that was about 2 inches long. guess they just took the hot dogs and cut then dipped and fryed . hope this helps rosie :D

Oscar Mayer now makes mini hot dogs that would probably work well in this recipe. They are gluten free.

A quick easy idea... I've used it for deep fried fish and it worked very well! I just made up a batch of Pamela's Pancake mix, exactly how I make it for pancakes, only I added a bit of salt and pepper. Dipped my fish and deep fried!

It tasted just like the regular batter!! I'm going to try it for chicken balls as well!

Probably for onion rings you would want it a bit thinner? Not really sure...

I have so little time to cook that I love mixes! :lol:

As the owner of a restaurant, here is my secret recipe for onion rings which we sell just a TON of. Slice your onions REALLY thin. Put together some flour, I use Bob's Red Mill gluten-free FLour Mixture, Lawry's Seasoning and pepper. Wet your onions with water, dredge them in the flour mixture and deep fry. Of course, I have to put a pan on the stove with separate oil now, and I am also doing Weight Watchers, so I don't eat onion rings very often. You need to just stir them around while you are cooking them, then don't cook too long. We serve them by the hill and mountain and are famous for them.

      I just want to clarify that what I posted is a category of research summaries we've done over the years, and nearly each one shows that there is definitely a connection to celiac disease and migraine headaches. The latest study said: "the study did indicate some potential causal associations between celiac disease and migraine with or without aura, as well as between migraine without aura and ulcerative colitis...this study did not find evidence of a shared genetic basis..."       Two months ago, I started taking Dupixent for dermatitis herpetiformis and it has completely cleared it up. I can't believe it! I have had a terrible painful, intensely itchy rash for over a year despite going fully gluten-free. See if your doctor will prescribe Dupixent. It can be expensive but I am getting it free. When the dermatitis herpetiformis was bad I could not do anything. I just lay in bed covered in ice packs to ease the pain/itching and using way too Clobetasol. Dapsone is also very good for dermatitis herpetiformis (and it is generic). It helped me and the results were immediate but it gave me severe anemia so the Dupixent is better for me. Not sure if it works for everyone. I cannot help with the cause of your stress but from experience I am sure the severe stress is making the celiac and dermatitis herpetiformis worse. Very difficult for you with having children to care for and you being so sick. Would this man be willing to see a family therapist with you? He may be angry at you or imagine that your illness is a psychosomatic excuse not to take care of him. A therapist might help even if he won't go with you. Also do you have any family that you could move in with (with the kids) for a short time to get away? A break may be good for you both.

      @tiffanygosci, Thiamine deficiency is a thing in pregnancy for "normal" people, so it's exponentially more important for those with celiac disease and malabsorption issues. I studied nutrition before earning a degree in Microbiology because I was curious what the vitamins were doing inside the body.  See my blog.  Click on my name to go to my page, scroll to drop down menu "activities" and select blog.   So glad you're motivated to see the dietician!  We're always happy to help with questions.  Keep us posted on your progress!

      Thank you for sharing all of this, Knitty Kitty! I did just want someone to share some commonality with. I did not know This one Deficiency was a thing and that it's common for Celiac Disease. It makes sense since this is a disorder that causes malabsorption. I will have to keep this in mind for my next appointments. You also just spurred me on to make that Dietician appointment. There's a lot of information online but I do need to see a professional. There is too much to juggle on my own with this condition.<3
