Brownies To Die For!

Okay folks, here is one I made this evening that I mofified from a regular non-gluten-free recipe and it is sooooo yummy! Definately not a low cal/fat snack, but who cares?!?!

Chocolate Peanut-Butter Layer Brownies

6 oz semi-sweet chocolate, chopped or use chips

2 sticks butter (1cup)

2 1/2 granulated sugar

6 large eggs

2 tsp vanilla

2/3 C rice flour

1/3 C tapioca flour/starch

1/3 C potato starch

1/2 tsp xanthan gum

1 tsp baking powder

1 tsp salt

1 C peanut-butter (chunky or creamy, you decide)

6 oz semi-sweet chocolate chips, optional

Preheat oven to 325, and spray or butter a 12" cake pan.

Melt first amount of chocolate in a microwave safe bowl, stirring after every 10 seconds, unitl smooth, or melt in the top part of a double boiler, set aside to cool.

In a large bowl, or in the bowl of your mixer combine butter and sugar and beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla. In a seperate bowl combine dry ingredients and add this slowly to the butter mixture beating until combined.

Split the batter in half and mix the peanut butter with half and the melted chocolate with the other half, fold the chocolate chips into which ever batter you want.

Spread one layer evenly in the pan. Drop second layer by large spoonful onto bottom layer and spread out carefully to form an even layer. Bake brownies in the center of your oven for 50 - 60 minutes, or until a tester comes out with crumbs adhearding to it, but no batter.

Makes 30 - 40 thick brownies

FYI - I baked mine at 350 for the smae time as the original recipe and it got just a little too dark on the outside before the center was done, so I extended the time and lowered the temp for you in the instructions above, but if you find it's baking too slowly, bump up the temp. Also, this makes a ton, so I'm freezing most of mine in individual little baggies so I can grab and go!

      More great tips, and a good excuse to shop at M&S and also buy more iced buns!   I wish we had an ASDA near us, as the few times we've been to one their gluten-free pasta range seemed very reasonably priced compared to other shops.  Thanks so much, @Russ H.

      I hope you are on the mend soon. About 1 in 5 people who contracted chicken pox as a child go on to develop shingles in later life - it is not uncommon. There are 5 known members of the herpes virus family including chicken pox that commonly infect humans, and they all cause lifelong infections.       BFree bread is fortified with vitamins and minerals as is ASDA own-brand gluten-free bread. All the M&S bread seems to be fortified also.

      You might try Heallix.  It's a silver solution with fulvic acid. I just put the solution on with a cotton ball.  It seemed to stop the nerve pain. Again,  not in your eyes or ears.   Go to heallix.com to read more about it and decide for yourself Also,  I do think nerve and celiac combined have a lot to do with your susceptibility to shingles breaking out.

      Celiac disease requires both genetic potential and a triggering stress event to activate the genes. Otherwise it remains dormant and only a potential problem. So having the genetic potential is not deterministic for celiac disease. Many more people have the genes than actually develop the disease. But if you don't have the genes, the symptoms are likely being caused by something else.
