Thanksgiving And Christmas Dinner Menus (long!)

I've had a couple people ask me to post the recipes I'll be using for my Thanksgiving and Christmas dinners. (At least, what I'll likely be using. :P) I'm sorry it took more than a week to get back to those who requested this, but work's kept me swamped. The website links are to recipes which I've already posted on my own website. (There's a tasty pumpkin butter recipe there too.) Note that these recipes are Gluten-free Casein-free, but the pumpkin pie does have soy in it. Also note that if you think a recipe could use some additional fat or salt, it probably could. My FIL had a heart attack a while ago, and follows the Ornish diet, so this is as low in fat/salt as I can comfortably make it, excluding the dressings.

Thanksgiving

Green Salad

3 cups Spinach, cut into strips

3 cups Mixed Greens, cut into strips

3 cups Red Leaf Lettuce, cut into strips

1 Red Onion, sliced into thin strips

2 Red Bell Peppers, sliced into thin strips

2 Carrots, sliced into thin strips

1 pint Yellow Cherry Tomatoes, cut into quarters

Combine all ingredients in a large bowl.

Serve separately from dressing.

Balsamic Vinaigrette

Bean Soup

1 to 1 1/2 cup Bob's Red Mill 13 Bean Mix

1 box Imagine Chicken Broth

1 yellow onion, chopped

1/2 tsp ground sage

1/2 tsp dried rosemary, crushed

1/2 tsp thyme

1/4 tsp cumin

1/2 tsp salt

Put beans and broth in a tall pot.

Add onion, and spices.

Bring to a bare simmer, and cover partially.

Stir every half hour, and add water to cover beans by 1/2" if necessary.

After four hours, simmer down to desired consistency. Serve hot.

Herb-Roasted Turkey

12-16lb turkey

2 tbsp sage

2 tbsp oregano

2 tbsp rosemary

2 tbsp thyme

2 tbsp basil

2 tbsp salt

6 cloves garlic, crushed

2 large onions

4 large carrots

1 celery bunch

Mix seasonings together.

Chop onions into quarters, and carrots and celery into large chunks.

Create a very large sheet of aluminum foil (may have to fold together two or three strips of foil) and put center of it in the roasting pan.

Remove giblets and all other parts from turkey and put turkey in the roasting pan inside the aluminum foil.

Work the skin back from the breast and as much of the legs as possible and evenly distribute half of the seasonings under the skin.

Distribute the rest of the seasonings on the outside of the turkey.

Fold the foil up and seal around the turkey, inserting a thermometer probe after this step if there is one.

Put in a 350F oven until cooked through.

Turkey Gravy

juices from the turkey cooked above

1/4 cup cold water

2 tbsp cornstarch or sweet rice flour

Pour the juices from the turkey into a separate pan, defatting if desired.

Add up to a cup of water as needed for the amount of gravy desired.

Bring to a simmer.

Combine cornstarch or rice flour in cold water, and pour in a tablespoon at a time into the simmering gravy, waiting for it to thicken each time until the desired consistency is achieved.

Cranberry-Pomegranate Relish

1 bag cranberries

2 cups pomegranate juice

1/2-1 cup sugar

Combine all ingredients (starting with a half cup of sugar) in a stainless steel pan

Simmer on the stove until the cranberries pop and the sauce is nearly the desired thickness, about 90 minutes.

Add sugar to taste at the end.

Mashed Sweet Potatoes with Pumpkin

3 sweet potatoes

1 can pureed pumpkin

Cut sweet potatoes into small cubes and steam until tender.

Mash thoroughly, adding the can of pumpkin. Serve hot.

Wild and Brown Rice Stuffing with Mushrooms and Onions

1 1/2 cups wild and brown rice blend

3 cups vegetable broth

1 lb mushrooms

1 large onion

1 large carrot

1 celery rib

5 cloves garlic

1 tsp ground sage

1 tsp oregano

1 tsp basil

1 tsp thyme

1/2 rosemary

1/4 tsp majoram

Combine all ingredients in a large pot, and bring to a simmer.

Reduce heat, cover, and stir every 5-10 minutes to create a saucier consistency.

Continue cooking until rice is cooked through, about 45 minutes.

Thank you so much for posting all those wonderful sounding recipes! I always look forward to your posts on any subject on this board.

We make a green salad like yours, but use pine nuts and cranberries for a sweet and crunchy taste.

      I appreciate you validating me because medical is an issue and it's not ok at all they they do this. Some days I just want to call the news media and just call out these doctors especially when they are supposed to be specialist Downplaying when gluten-free when they should know gluten-free is false negative. Now dealing with other issues and still crickets for disability because I show no signs of celiac BECAUSE IM GLUTENFREE! Actively dealing with sibo and skin issues.Depression is the key because thats all they know, im depressed because medical has caused it because of my celiac and related issues. I should have never ever been employed as a bus driver.After 3 years still healing and ZERO income desperately trying to get better but no careteam for celiac other than stay away frim wheat! Now im having care because my head is affected either ms or meningioma in go in tomorrow again for more scans.I know im slowly dying and im looking like a disability chaser

      M&M Peanuts. About the same calories and sugar while M&M Peanuts have fiber, potassium, iron and protein that Tootsie Rolls ("We are currently producing more than 50 million Tootsie Rolls each day.") don't. Click the links to compare nutritional values.  Both are made with sugar, not high fructose corn syrup.  I use them as a gluten free substitute for a peanut butter sandwich.  Try her on grass fed, pasture fed milk. While I get heartburn at night from commercial dairy milk, I do not from 'grassmilk'.

      I see it everyday on my feeds.  They go out and buy gluten-free processed products and wonder why they can't heal their guts.  I don't think they take it as a serious immune disease. They pick up things off the internet which is so far out in left field.  Some days I would just like to scream.  So much better when we had support groups and being able to teach them properly. I just had an EMA blood test because I haven't had one since my Doctor moved away.  Got test results today, doctor ordered a D3 vitamin test.  Now you know what  type of doctors we have.  Now I will have to pay for this test because she just tested my D3 end of December, and still have no idea about my EMA.
