New And Trying To Figure It All Out

Hi! I am new to all of this. My husband is the possible celiac. We don't know for sure because when they did the test they said that it tested for 2 markers and one said positive and the other said negative. They said that he should try a gluten free diet to see if it helps him. He has now been on it for 2 days. We went to the health food store yesterday and got him a few things. I feel at a loss on what I can and can't get for him to eat. I think that I am slowly figuring it out. I have only really been looking into it now for a few days though.

We are wondering about a few things.

1) corn tortillas-Are all of them gluten-free or only some.

2) mustard

3) Kraft 1000-island and Italian dressings

4) sardeines (sp?)-He loves them, I think they stink but he wants to know if he can eat them.

That is all that I can think of for now. Thanks in advance for any help.

Corn tortillas should be safe, but always check the ingredients. Tortilla chips may contain gluten. Especially some of the flavored ones. Or they may be cross contaminated with gluten. Always check the bag.

Mustard may contain gluten. Again, check the label. I've seen some with wheat in it.

Can't help you with the dressings or sardines since I don't eat them.

Are you thinking about eventually having blood tests and endo??? If you are and he goes gluten-free, he will have to do a gluten challenge before testing. (Dr. Green says a challenge consists of 4 slices of reg bread a day for a month). Just wanted to throw that out there incase you didn't know. For some a dietary response is enough.

1. Not all corn tortillas are gluten-free. Make sure to read labels.

2.Same with mustard....distilled vineagar is gluten-free!

3. Kraft is a company that will disclose so it will cleary state on their labels

4.Not aure on sardines...they always looked alittle scary to me!!!LOL :D

(Dr. Green says a challenge consists of 4 slices of reg bread a day for a month). Just wanted to throw that out there incase you didn't know. For some a dietary response is enough.

1. Not all corn tortillas are gluten-free. Make sure to read labels.

2.Same with mustard....distilled vineagar is gluten-free!

3. Kraft is a company that will disclose so it will cleary state on their labels

4.Not aure on sardines...they always looked alittle scary to me!!!LOL :D

They did a blood test and that is what they said. What is the endo? Is there more than one type of blood test that can be done? Like I said, we are new to all of this.

The reason all of this was done to begin with was because back in May he had gotten sick, it turned out to be a stomach bug. During that sickness they did blood work and it showed that he was anemic. They then did upper and lower GIs and the barium test. Nothing from all of those so then he did the camera pill. Nothing there either. He has a brother that is celiac so he decided to see if he had symptoms of that. He seemed to have some so the did a blood test. We just got the results the other day, Wednesday to be exact.

Another question...If he doesn't seem overly sensitve to it now, will more sensitivity to it come about or will he always be the same.

Endo is when they stick the camera down your throat and look at your upper Gi ect. Sounds like he's had one but did they take any samples???? They couldn't have just "seen" the damage they would have had to take samples to see the villi damage.

For me....I have been gluten-free since may and if I get glutened or cc'd(cross contaminated) now I get more severe symptoms then I did before.

OK. He had an endo done early on but it was before celiac was suspected. I guess that if it had been suspected at that point thet would have taken samples. A that point, I think that they were trying to make sure there wasn't bleeding from anywhere that was making him be anemic.

I mentioned to him about eating 4 slices of bread for a month and his response to me was, "What are you tyring to do, torture me?"

My husband was diagnosed in March of this year. Not sure how far you are into this... Everyone says to replace the toaster and all banged up utensils. I bake a lot so that meant a new set of baking pans.. cookies sheets etc. figure anywhere that your bread touches his will too. and it's not good. I have found that my hubby is ok with some foods and not others. But I guess it's not worth testing depending on his symptoms!

Everything is reading the labels. When he was first diagnosed we took turns going to the store (cause we have two kids) so we could take time out to read labels. I was surprised to find out a lot of gravy mixes have gluten in it. Thus the frustration begins. If the label doesn't say gluten in it specifically read all the way to the bottom... it will say something like.. made on machines that has

contact with wheat, peanuts, or milk products. Just another problem to deal with ..

I spent about 55.00 (a deal actually) on a 1 - 2 pound loaf breadmaker. He likes the favorite sandwich bread mix. I have tried a couple others but the stuff you get in the store is awful and usually really hard. At least by making it in the breadmaker he can freeze what he doesn't want and take it out as he needs it. at least it doesn't go to waste!

      Cold/flu or gluten poisoning? Hello. I've had another similar episode. I find it very difficult to differentiate between the symptoms of a cold or flu and those caused by gluten poisoning. In fact, I don't know if my current worsening is due to having eaten something that disagreed with me or if the cold I have has caused my body, which is hypersensitive, to produce symptoms similar to those of gluten poisoning.

      I'm no longer dealing with constipation. I got my liver test last month and it was in normal range. Two years ago I did have a vitamin D deficiency but I'm know taking vitamin D3 pills. Last month I got my vitamin D checked and it was in normal range. I don't believe I've had my choline checked. However, I do drink almond milk eat Greek yogurt on a daily basis.

      Non-Celiac Gluten Sensitivity (NCGS) can be associated with low ferritin and iron deficiency. Once Celiac Disease (1% of the population affected) has been ruled out by tests the next step is to check for Non Celiac Gluten Sensitivity (10% of the population affected) by eliminating gluten for a trial period, then re-introduce Gluten Challange. Have you been supplementing Iron? How are your liver enzymes? Low levels of ferritin indicate iron deficiency, while  59% transferrin saturation indicates high iron levels.  Possibly indicating Fatty Liver Disease.  Choline is crucial for liver health, and deficiency is a known trigger for Non-Alcoholic Fatty Liver.  Some experts say that less than 10% eat the the Food and Nutrition Board established Adequate Intake that are based on the prevention of liver damage. Severe constipation and hemorrhoids may be linked to a bile or choline deficiency.  "Ninety-five percent of phospholipids (PLs) in bile is secreted as phosphatidylcholine or lecithin."  Fatty acid composition of phospholipids in bile in man   Deficiency of these bile salts causes the bile to get thick. Some people with Celiac Disease are misdiagnosed with Gall Bladder bile issues.  Removal of the gallbladder provides only temporary relief. Whether or not celiac disease or NCGS are your issues you need to look at your vitamin D blood level.

      If you have hemorrhoids 1x weekly I don't see how you have time to heal from one episode before you experience another one, unless each one is a very minor event. Have you consulted a physician about your hemorrhoid issue? It's not normal to be having an episode every week unless it is really one episode that is not completely healing between weekly flareups.
