Hello! I'm an avid baker and I'm trying (again) to get my flour mixes right. I have found Potato flour and starch but I can't find tapioca flour....is it the same as starch? I thought there was a HUGE difference!?

Anyone have a great mix of flours? I have about 8 bags of different kinds of flours sitting my freezer and I need them out to shove Christmas cooking in there!!! lol HEEEEELLLLP!

Potato flour and starch are different but tapioca starch and flour are the same thing. Clear as mud, eh?

I listed the flour mixes that my wife uses in "Alton Brown Chocolate Chip Cookies" thread. They work really well.

Yeah tapioca is the same. I can't remember from where, but I know I bought some with a label that said "Tapioca starch/flour" haha. Even with the potato though, I've used flour if it said starch and it still works out the same.

There is no difference between tapioca flour and tapioca starch.

Potato starch is not the same as potato flour, but in some cases you will be able to substitute without a big difference. Potato starch is more refined and has less of a thickening effect and provides no fiber content.

Your response on this matter is what I expect. You’ve had a similar episode years ago, but this one is lasting longer!

I'd like to clarify: Is the pain you describe in the area just below your chest constant, or does it only appear when you start moving?
