Wacky Brownies

I love chocolate and brownies. My 16 year old wants to go gluten-free, df and meat free. I just made these and they turned out really good on the first try. I put in healthier ingredients. Feel free to tweak it! I call these Wacky Brownies b/c I go wacko for chocolate and b/c they are made so different.

Wacky Brownies

dry ingredients:

1 cup Carol's gluten-free flour blend (see below)

1 T. Coconut flour (or just use Carol's)

1 T. ground flax seed

1/2 cup sugar

1/4 cup baking cocoa

1/2 tsp. baking powder

1/4 tsp. baking soda

1/4 tsp. xanthan gum

dash salt

wet ingredients:

1/2 cup veg. oil

1/2 cup applesauce

1/2 tsp. vanilla extract

2 T. water

additions:

1/4 chopped nuts. opt.

1/2 df chocolate chips

Whisk together the dry ingredients in a bowl. Stir in the wet ingredients with a fork. Fold in nuts and chips if using, with a spatula. Or sprinkle additions on top. Spread into a greased 8x8 inch pan. Let sit. Turn on oven to 350 degreees. When oven is hot, bake for 20 to 25 minutes or until toothpick comes out clean.

Carol's gluten-free flour blend

1 1/2 cups sorghum

1 1/2 cups potato starch or cornstarch

1 cup tapioca flour

      The Lindt (Lindor) dairy-free oat milk truffles are definitely gluten-free, and (last time I checked) so are the white chocolate truffles and the mint chocolate truffles.

      I've used magnesium taurinate and magnesium taurate vitamins.  Didn't notice much of a difference when I used them.

      Yarrow Pom works really well with the skin issues I found out.I had to stop so my doterra because dealing with medical celiac circus. I had shingles in Feb 2023. Prayers for healing

      More great tips, and a good excuse to shop at M&S and also buy more iced buns!   I wish we had an ASDA near us, as the few times we've been to one their gluten-free pasta range seemed very reasonably priced compared to other shops.  Thanks so much, @Russ H.
