Please help!

I have been gluten free since May 26th and I think I have just gotten through one of the roughest months ever. I am a sweet fiend. I love dessert...especially cake with frosting! And if it is homemade it is harder for me to resist than a store bought cake. The past month, the girls I eat lunch with have gone across the street a couple times a week for carrot cake and german chocolate cake......and then we have had the birthdays in my department.

Yesterday, Wednesday, was the worst of them all. We had a homemade looking and smelling chocolate cake and an eclair cake and that was it. It is not bad when there is fruit or ice cream, cuz most of that I can eat. But when there is nothing there and I want nothing more than to join in, I find myself getting a little bratty and not happy and just LONGING to get a big bite of the cake!!! It has reached that point where I just cannot stand it anymore. I am tired of people not being considerate of people with food problems. We have 2 wheat allergies, a peanut allergy, a diabetic and a celiac in our department alone...... I know it is someone elses birthday, but how do you include everyone without taking away from that persons day? Any advice on how I can deal with the frustration and the CRAVINGS??

And I tried keeping something in my desk, but as the birthdays are spread out, I tend to eat it in advance.

When I first learned I had Celiac, Never once did I ever crave sweets again. It just stopped. I knew what it was going to do to me so I never ate it.

When I go out to a party like this I make some Gluten Free Brownies, which BTW are awsome. Some coolwhip and your set. I bring it with me and when the cake it served I have mine.

The craveings will stop when your bosy detoxes...and then you'll be fine! :)

Lemon Cream Coffeecake

Gluten, Soy & Dairy Free

pastry:

1 1/4 cup organic white rice flour

3/4 cup organic coconut flour

1 tb xanthan gum

1/2 ts kosher or sea salt

1 ts baking powder

1/2 ts baking soda

1 cup sugar

3 large organic egg

1/2 cup coconut oil

3/4 cup coconut milk

2 ts pure vanilla

1 tb lemon zest

lemon cream:

2 tb coconut milk

1 1/2 cup confectioner's sugar

1 ts lemon oil

*slivered almonds to sprinkle on top

Preheat oven to 350F.

Mix together lemon cream ingredients, and place bowl in refrigerator.

In your favorite stand mixer, put eggs, sugar, vanilla, oil and milk, zest and blend well.

In a seperate bowl put flours, xanthan gum, baking soda, baking powder, salt, and mix together.

Add dry ingredients to egg mixture, combine, then pour into 10" springform pan, sprayed with pam

Bake for 25 minutes. Cake will bounce back when you push on it.

When serving, pour lemon cream over each slice on each plate.

Enjoy!

Ooooh, I am so with you. After reading lots of these forums, I have decided that time must go by... The people who are ok with this have dealt with it for a while and are pros. I am in my third week, and still feel miserable! It stinks! I am a middle school teacher with three kids 4 and under. Like I have time to cook for myself! I can barely get everyone up and dressed, then dropped off to daycare before I begin my work day. It is really hard for me, and like you, I want to eat something that tastes soft and yummy! There are days when I feel I can not keep eating like a goat! I am so sick of potatoes, rice, and salad, I could throw up! I would almost rather deal with the lousy effects than have to worry about what I am putting in my mouth constantly. Am I doomed to hard, crunchy food?

OK, phew... got it out. I feel better! Thanks for hearing my vent.

As I am learning how to cook new things, what the heck is xanthanm gum, and where can I find it?

PS Cool whip is ok? AWESOME!!!!

i have no words of advice but i will commiserate with you! i'm in week 7 of the diet and lately i've been dreaming about yummy glutenous foods! the other night i dreamed i ate a wonderful, gooey, mouth-watering grilled cheese sandwich. i woke up and was so scared that i had actually eaten it and that i was going to feel crappy all day! :(

i currently work from home (and coincidentally have ever since i started gluten-free) so i'm lucky that i don't crave what i can't see. but i know how torturous it is to see other people enjoying a delicious cookie or piece of cake and you're left nibbling on a carrot stick or something like that. m&m's are my vice. i always have them with me and toss back a few when i'm feeling left out or need a quick chocolate fix. i also like Pamela's cookies but they're so expensive so i have to restrain myself from cleaning out their stock when i'm at the store.

i really hope this gets better. i was such a terrible eater before this. everything i ate was processed and convenient so i guess i'm going through a detox of sorts...

Make some Gluten Free sweets or buy them, and don't let anyone else eat them! You can't eat their cookies, don't let them eat your's!

The desire did go away some for me, but it can hit you hard when you don't expect it. It doesn't have to be sweets either, I still can't get over Wendy's chicken nuggets. After eating wonderful baked chicken breaded in Corn Flake crumbs, I could think of nothing more than Wendy's chicken nuggets.

Key: stock up on alternatives. Full meals, snacks, the works.

You guys are so great! It really does feel better knowing that I am not alone and can seek help and support here. M & M's are my saving grace too. I read somewhere that Snicker's are also ok. Is that true?

I do confess, I had a very lovely dinner of corn tortillas with melted cheese, cilantro, and a few thin slices of proscuitto. Super yum! This morning it was a Trader Joe's waffle with peanut butter, hard boiled egg, and an apple. Pretty good too. I guess it helps to focus on the positive. My friends at school have been looking in my lunch box. They think it's kind of funny to watch, then comment on my lunch choices. At least it keeps it light! Plus, dairy, corn and nuts seem to be ok with me, and it seems there are plenty of people here who can't have any of those things.

The worst part is having three kids. By that I mean, it would be the responsible thing to get them tested, but I know I am holding off because I know the amount of work and change it will entail if they end up testing positive. Since I am so new and still struggling, I can't imagine having to ultimately withhold food from them. Gosh it's hard!

Somewhere around here is a thread titled something like "your favorite snacks". It has many pages of snack ideas / dessert ideas for people who don't mind those kind of things (that would include me). Yes it is horrible, pages and pages of gluten-free snacks... :D Just kidding. I hope you find something you like.

Go to recipezaar#209764 for a great recipe called "One Bowl Chocolate Cake". Its so good you wont even wait to frost it. If you don't like chocolate try, recipezaar#174346, for an apple cake, be sure to lick the spoon on this one :P ) Make them in a muffin pan and freeze some little cakes for an emergency!

If you like pumpkin bread...I posted a recipe for it on the Baking and Cooking section on July 23

If you can have gluten-free oats, you gotta try the Chewy Chocolate Oat Chip Cookies I posted on Aug 14th.

Try them with a puffed up marshmallow...I can't make them very often...you'll see why if you make them. Freeze them by the 2's , then you can have a "smore" anytime you need a pick-me-up.

There is so much a gluten-free free person can't have...like eating out...you deserve to make a cake and eat it too B)

Where do you get the brownies? Or is there a good recipie that you use?? I wish the sweet craving would stop. I am ok with the bread and the donuts, but I have horrible temptation with some cakes and pies (key lime)

That sounds so good! I am going to have to go on a massive shopping trip and try this! Only problem is, I live alone, so I do not tend to make a lot of sweets to keep around the house, cuz I want to keep my "girlish figure" :lol:

I will say, on the whole, it does get better. I try not to let my fear of getting sick keep me from eating out and for the most part, when I do eat out, I have been ok. I just have to be really careful and really specific. There is some good gluten-free bread out there, and you can have your Grilled Cheese Sandwich!!! Whole Foods Sandwich bread is good, but I toast it before I put anything on it. Granted, I used to toast bread anyway, but I hear toasting gluten-free bread helps it to taste better. So, get some gluten-free bread and have that Grilled Cheese!! :)

I have been an M&M fiend, but I wonder about them and if they use flour in the coating process. My cousin has a 4yo who is a celiac and they swear by the Reeses' stuff. She is so sensitive that that tends to be what I stick with! I have not tried the Pamela's cookies, but I am going to have to. Like I said, the worst is when I am at work, where I do not keep sweets cuz I much and then gain weight and it is someones birthday. I guess, I am just going to have to find out when the birthdays are and bring in my own treat.

It does get better!! I promise. The best thing, imho new opinion, is to just stay positive. I live alone, so processed has been my friend (hamburger helper was my main meal), but I have found a gluten-free alternative that is actually better!!

To go to the choc cake:

type in:

you will see it...mmm...you can use reg baking cocoa or Hershey's special dark or Saco and you will get diff cocoa flavors and shades of chocolate...can you tell I make it often. Bake it in a jumbo muffin tin (makes about 7) to get yummy individual cupcakes. Throw in some choc chips if you want to.

If you want to make hm brownies, this web site has the best one I have tried, out of many(I am a chocolate lover ;) ) Be sure to bake them the full time or add 5 minutes. They are full of no-no's :angry:

Tip: Focus on what you can have, rather than what you can't...it takes a load off that way...Example:

You can have dessert but a different kind. You can eat yours but you will it eat later or bring it with you.

Oops, sorry about the previous "non post", I'm a rookie!

Rebecca Reilly has a great book, Gluten Free Baking. I have made several of the recipes and they have all been delicious. Even my gluten eating friends and family rave. There are even recipes for cream puffs and graham crackers.

That is a valid question.  Unfortunately the short answer is slim to none.  Be proactive, when the diagnosis process is completed, start GFD.  Remember also that the western diet is deficient in many nutrients that governments require fortification.  Read the side of a breakfast cereal box. Anti-tTG antibodies has superseded older serological tests It has a strong sensitivity (99%) and specificity (>90%) for identifying celiac disease. A list of symptoms linked to Celiac is below.  No one seems to be tracking it, but I suspect that those with elevated ttg, but not diagnosed with Celiac Disease, are diagnosed with celiac disease many years later or just die, misdiagnosed.  Wheat has a very significant role in our economy and society.  And it is addictive.  Anti-tTG antibodies can be elevated without gluten intake in cases of other autoimmune diseases, certain infections, and inflammatory conditions like inflammatory bowel disease. Transient increases have been observed during infections such as Epstein-Barr virus.Some autoimmune disorders including hepatitis and biliary cirrhosis, gall bladder disease. Then, at 65 they are told you have Ciliac Disease. Milk protein has been connected to elevated levels.   Except for Ireland and New Zealand where almost all dairy cows are grass fed, commercial diaries feed cows TMR Total Mixed Rations which include hay, silage, grains and concentrate, protein supplements, vitamins and minerals, byproducts and feed additives. Up to 80% of their diet is food that cannot be eaten by humans. Byproducts of cotton seeds, citrus pulp, brewer’s grains (wheat and barley, rye, malt, candy waste, bakery waste. The wheat, barley and rye become molecules in the milk protein and can trigger tTg Iga in persons suseptible to Celiac. I can drink Grass fed milk, it tastes better, like the milk the milkman delivered in the 50's.  If I drink commercial or Organic milk at bedtime I wake with indigestion.

      I strongly recommend 2 dedicated gluten free (gluten-free) restaurants in my area (East Bay of San Francisco Bay Area) (2025) -- Life is Sweet Bakery and Café in Danville. I've been a few times with friends and tried multiple entrees and salads. All very good and worth having again. I've also tried a number of their bakery goods. All extremely good (not just "good for gluten-free"). https://lifeissweetbakeryandcafe.com/ -- Kitara Kitchen in Albany (they have additional locations). I've been once and had the "Buritto Bowl". Six individual items plus a sauce. Outstanding. Not just "for gluten-free", but outstanding in its own right. Vibrant flavors, great textures.       I'm 67 and have been celiac for 17yrs. I had cataract surgery and they put a gluten lens in my eye. Through a lot of research, I found out about MMA acrylic...it contains gluten. It took 6 months for me to find a DR that would remove it and replace it with a gluten-free lens . I have lost some vision in that eye because of it . I also go to a prosthodontist instead of a regular dentist because they are specialized. He has made me a night guard and a few retainers with no issues... where my regular dentist didn't care. I have really bad reactions to gluten and I'm extremely sensitive, even to CC. I have done so much research on gluten-free issues because of these Drs that just don't care. Gluten is in almost everything shampoo, lotion, food, spices, acrylic, medication even communion wafers! All of my Drs know and believe me I remind them often.... welcome to my world!

      If this applies geographically, in the U.K., physicians will often declare a diagnosis of celiac disease based on the TTG-IGA antibody blood test alone if the score is 10x normal or greater, which your score is. There is very little chance the endoscopy/biopsy will contradict the antibody blood test.
