Delicious Way To Cook That Salmon!

I buy nut flours from Digestive Wellness and bought some pecan meal this last time. I used a small amount in some yummy spice cake but knew there had to be other uses for it. I made this tonight. Super easy and oh so yummy:

Pecan-Crusted Salmon with Honey Mustard Glaze (original recipe from betterrecipes.com)

Ingredients:

2 salmon fillets

1/4 c. honey

1/4 c. dijon mustard

1/8 c. olive oil, or as needed to thin glaze

1 T lemon juice

1 1/2 cup shelled pecans, finely ground

salt and pepper to taste

Directions:

In small bowl combine honey, mustard, oil, lemon juice for glaze using just enough oil to keep glaze from getting too thick (I added some salt and pepper to the glaze). (Salted & peppered the salmon before adding the glaze) Coat salmon lightly with glaze, then cover with ground pecans. Salt and pepper to taste. Heat oven to 400 degrees. Bake salmon on a baking sheet lined with foil for 12-15 minutes or until salmon flakes. Serve at once, top with more glaze if so desired.

So I had to make salmon..canned that is...I made patties for my cute little "buns" that turned out today to take to my 19 yr old dd. I hope she enjoys them :D

DH doesnt eat fish, but asked if this crust could work for chicken. I thought it could. So I Googled "Pecan Crusted Chicken" and found recipes. So I will try this same thing with chicken soon. :)

I almost bought pecans last night..I should have for that chicken :unsure:

P.S. dd loved the buns..pecan chicken would be good on them too

I tried to make pecan crusted chicken once and BURNED my pecan crust! LOL :lol:

that is a hard smell to get out of the kitchen! :o:lol::o

sounds absolutely delicious- I miss dijon bad ;)

This recipe sounds like it would be good without the pecan topping too - just with the dijon glaze...um!!!

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
