Mexican Spaghetti

I wanted to try corn spaghetti so I came up with this recipe today. Adjust it according to your tastes, pantry items and leftovers ;)

Mexican Spaghetti

1 8oz. box De Boles corn spaghetti (got it at Walmart)

1 15oz. can beans, drained (I used pinto)

2 or 3 15 oz. cans flavored tomatoes (I used 1 can fire roasted w/garlic and 1 can w/green chilies)

1/2 to 1 cup frozen corn (I used the one w/ onions, peppers and beans)

leftover taco meat

left over taco toppings

tortilla chips

Cook spaghetti according to package directions and keep warm.

Heat taco meat and keep warm.

Puree tomatoes and heat in a pan.

Heat beans adding a bit of water.

Add corn to the beans or heat separately.

Serve with leftover taco toppings on top and some broken chips too.

Tip: Fix extra taco stuff the day before with your tacos then this is really fast. :P

This recipe sounds wonderful. I love this pasta so much better than all the rest.

      Thanks for your input.

      If you have hemorrhoids 1x weekly I don't see how you have time to heal from one episode before you experience another one, unless each one is a very minor event. Have you consulted a physician about your hemorrhoid issue? It's not normal to be having an episode every week unless it is really one episode that is not completely healing between weekly flareups.

      No I haven't had one since 2021. I rarely have more than 1 per week.

      Sorry, I see that now as I reread your original post. You say you have hemorrhoids "only once a week" now. When I develop hemorrhoids, which is once every few years now, it generally takes 3-4 days for healing to take place. So, it doesn't seem like you could have much relief time between episodes if you have them weekly. Have you had a lower GI scoping done recently?

      Everyday I eat a medium to large apple in the morning and a large banana at night. I eat a cup of oatmeal in the evening. The ezekiel wheat bread I eat has a good amount of fiber. I haven't dealt with constipation for at least a year. Most of the time my feces are soft.
