6th Birthday - "cake" Ideas

She wants a big giant cookie for her cake that she had last year before going gluten free. I'm wondering if you can recommend the best cookie mix, brownie mix and/or cake mix for cupcakes so I can decide what to bake for her birthday. I don't think I can bake the big cookie in my oven and have it come out OK.

I say mix instead of from scratch because I'm pressed for time and not the best at baking.

Gluten-free Pantry makes a chocolate chip cookie mix that has instructions to make a really good cookie cake. Everyone in my family loves it!

You could also just bake regular size cookies & then place them together on a tray & icing the top. Geez, that sounds good !!!!

You can stack the cut brownies in a pile and place those tall, extra thin candles in the top.

We like the Namaste choc. cake mix for cupcakes. Some gluten-free baked goods work better in a couple of smaller pans rather than one big one. If you make the Namaste mix in a large rectangle, you may need to add more baking time than the package says to get it done in the middle. The Namaste is softer than other mixes. Pamela's is good too- just a little denser, if I remember right.

Thanks you guys! I knew you'd have some great ideas! I love the creative solutions of putting the brownies or cookies in stacks or put together with icing, etc. I got to the health food store today and bought 2 brands based on your recommendations. We will see how it goes next weekend!

I was at Whole foods today & saw the cutest cupcakes!!!.... The best one was two cupcakes put together then with green icing they made a dragon. The icing started with a tail, curved around & completely covered the cupcakes then continued down to form the head of the dragon. White icing or candy was used for the eyes. It was super awesome. They also had single cupcakes that were gorgeous, one was decorated with a rose on the top covering the whole cupcake. The rose was piped on icing. I cannot remember all the other decorations, I was so fascinated with the dragon!!!

I've seen the same concept but caterpillar instead and using more cupcakes.

you can actually buy cupcake pans that are made to make shapes with separate cakes at Target, etc. they are really cute.

Pamela's baking mix has the chocolate chip cookie recipe on the bag. Gluten eaters ask me to bake cookies for them, and they sold out at the bake sale. People (gluten eaters) even asked me for the recipe.

I like to make a double batch with walnuts, semi- sweet and sweet chocolate chips. (get half of the chip as chunks if possible). I don't flatten the cookies like the directions say.

Cherrybrook Kitchen cookie, cup cake mixes are the best we make cupcakes every year instead of Birthday cake. My sister makes a gluten-free ice cream cake which is fantastic I can get the recipe

      Normal vitamin D range us from 20 ng/ml to 100 ng/ml.  200 nmol/L is the same as 80ng/ml. Minimum vitamin D is based soley on preventing Rickets and osteomyelitis.  Othe research is considered irrelevant insufficnet proof.   My 25(OH)D level is just over 80 ng/dl.  It took 8 years of 10,000 IU a day to get here because Celiac Disease causes low D.  In 1952 the UK banned all vitamin D supplementation due to a error.  Most of the world followed suit.  In the western world vitamin D deficiency ranges from 40% of the US to 60% in the UK. If you had an office with workspace for 30 to 100 workers, but you were restricted to less than 50 workers, how well would the office run.? A factory worker has 40 ng/ml,  A lifeguard has around 80.  Who's immune system works better?       Welcome to the forum, @Mpanknin! Questions like that really have no definite answer. Even if you tested a container of it for gluten content, the test results would only be good for that production batch. Assume it has some degree of CC. A more important question might be, how sensitive are you to minor amounts of gluten exposure?

      I have Celiac, and I just found out that HCTZ has gluten in it, and also makes you severely constipated versus diarrrhea!!  I need another medicene for blood pressure that is certified gluten free, without the 20 ppm, and doesn't cause constipation, please!!

      Thanks Wheatwacked. My D is normal. I take B12, B6, and a bone health supplement (I'm 67) that has K1, Calcium, Magnesium, and a bunch of other things. But no thiamine. But I will have my doc add it to my next blood draw. Thanks for the info WW!

      Wondering if this is gluten free or not. The only ingredients show garlic. Nothing about where it's processed if there's cross-contamination etc. Anybody know?
