Anyone's Child Have Type1 Diabetes Also?

Hi, I'm wondering if anyone noticed a change in food absorption time after being diagnosed with Celiac and going gluten-free. My son has not been diagnosed YET but I do notice foods like pasta (with plain spaghetti sauce), rice, and potatoes take a long time to hit his blood sugars. We will bolus the actual carb amount at supper yet he will spike around 11-12pm and it will last for about 4 hours afterwards. He is on a CGMS so I can see it happening each and every time. I don't remember this happening 2-3 years ago.

My son had a TTG done 1 year ago, it was high at 95 when normal was under 20. THey scoped, it was fine. We retested the TTG 6 months ago and it was 149. They still would not diagnose b/c his scope was fine. We just retested and I'm awaiting results but they said if he's higher then they will schedule another scope and expect to see destruction at that point. (they told me a TTG over 200 is 100% celiac). So I await and learn and research.

      It's strange because I'm pretty sure not too long ago I picked up a loaf of bread with B vitamins, but I can't find a single one now.  Probably cutbacks, everyone's trying to save money now!

      Eating grains typically depletes certain B vitamins, so I'm not sure why they decided to fortify with calcium and iron, but hopefully we'll see more B vitamin fortification in gluten-free products going forward.

      @HAUS, I was at an event in the UK a few years back. I remember ringing the restaurant ahead to inquire about the gluten free options. All I wanted was a few gluten free sandwiches, which they provided and they were delicious. The gluten-free bread they used was Warbutons white bread and I remember mentioning it on this site before. No harm in trying it once. It's fortified with Calcium and Iron. https://www.warburtonsglutenfree.com/warbs_products/white-loaf/ The only other gluten-free bread that I've come across that is fortified is Schar with Iodized salt, nothing else.
