Cinnamon Buns

So I took a recipe for gluten-free danish and played with it, and came up with comething pretty darned close to cinnamon buns, in flavor and texture, if not apperance. Here's the recipe:

2 Tbsp shortening

1/3 cup honey

1 egg

1/2 tsp cider vinegar

1/2 cup plain yogurt or sour cream

1/2 tsp salt

1/2 tsp baking soda

1 tsp baking powder

1 tsp xanthan gum

1/3 cup potato starch

1/3 cup arrowroot starch

1/4 cup tapioca starch

1/4 cup gluten-free Pantry pizza mix

cinnamon to taste

Mix, no lumps, bake at 350 about 20-23 mins. I put it into a casserole baking dish, if you were ambitious you could turn it into rolls, but it seemed like too much effort to me, the dough is very squishy. Less baking time if it's separated into rolls. I also took a tbsp of honey and a tbsp of water, heated it, and poured it over the top, it made it sticky and just a bit crispy on top, super tasty!

Next time I'm going to add more cinnamon and swirl in finely diced walnuts. I also intend to add more yogurt and use a double recipe as a cobbler topping for peach cobbler. I think it would work with applesauce instead of yogurt too, for dairy free. I realize the flour mixture is rather odd, I was trying to use up little bits of leftover stuff. I'll be trying it with a more straightforward mix sometime. I'll update, I'm kinda sick with a head cold right now so won't be eating anything sugary anytime soon.

That looks like a good recipe! I'll have to give that to my sister as she makes amazing gluteny cinnamon rolls that I miss so dearly!!

These aren't so gooey-soft, they're more like springy cake, but they sure TASTE like cinnamon buns. I didn't put icing all over them.

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
