Hi! I sent away for a Zojirishi breach machine and I am assuming I will only be able to use it to make gluten-free free breads, correct?

Yes, I would only use the bread machine for gluten-free breads. I think it would be impossible to clean it thoroughly enough to prevent cross contamination.

I'm very sensitive to gluten--my 3 yr old (glutenoid) can make me sick for a couple days by touching my toothbrush. I have a breadmaker that I frequently used for years, prior to celiac disease. I used a 1:2 dilution of bleach to scrub and wash the breadmaker, and haven't had any problems. My education/background is biochemistry. Treatment with bleach should oxidize and denature any gluten that might otherwise be problematic. ;)
