"safe" Brands

I've seen the list of "safe" brands on here (I think it's Kaiti who posted?) but I was wondering what that meant.

Ok, for example, if a product from one of those companies contains maltodextrin, am I safe in assuming that's from a gluten-free source??

Please clarify. I'm still confused.

Maltodextrin in food(medication is excluded) is safe in the US unless otherwise stated on the label. This is a law they must follow.

As far as safe brands are concerned...they are ones that will not hide any wheat, rye, barley, oats under anything even otherwise questionable. So you just have to read the label with those brands, no need to call because they will clearly put wheat, rye, barley, oats right on there.

A question about the Wal-Mart deal... what exactly are they doing? From what I understand, they are making the brands they sell in the stores put on the label if it has wheat, barley, etc,.... or is it going to force them to put clearly on the label GLUTEN FREE..?

I think Wal-Mart is going to do the "Gluten Free" labeling.

That would be awesome! It is nice when the box screams GLUTEN FREE at you. I always feel much better.

Welcome to the forum, @yellowstone! The most common ones seem to be dairy (casein), oats, eggs, soy and corn. "Formed" meat products (because of the "meat glue" used to hold their shape) is a problem for some. But it can be almost anything on an individual basis as your sensitivity to rice proves, since rice is uncommonly a "cross reactor" for celiacs. Some celiacs seem to not do well with any cereal grains.

What foods can trigger a response in people with gluten sensitivity? I've read that there are foods that, although they don't contain gluten, can cause problems for people with gluten sensitivity because they contain proteins similar to gluten that trigger a response in the body. I've seen that other cereals are included: corn, rice... also chicken, casein. I would like to know what other foods can cause this reaction, and if you have more information on the subject, I would like to know about it. Right now, I react very badly to rice and corn. Thank you.
