I've been reading a lot about gluten-free since I'm a newly diagnosed Celiac & I've read that "modified corn starch" & "other natural ingredients" could contain gluten.

No, and Welcome!

In the US, any ingredient containing wheat will be required to be disclosed.

Modified Corn Starch is gluten free. No wheat involved.

And any natural ingredient, if involved wheat, by law should be listed. If you don't see it, it's not in there.

We have had and increase of members, who are ADDITIONALLY intolerant to corn, post. Generally, most people with Celiac, do not have issues with corn.

I agree with Lisa. Now this applies to the US and Canada.. If you live in a more exotic locale, the rules could be different.

Look at some of these lists. Of course, we can't list everyting that is safe or the list would be too long...bananas, oranges, white rice, brown rice, etc.

How often are theses gluten safe/unsafe food lists updated? I've looked it over, but it was first published in 2007 and I know some guidelines on food labeling have changed since then.

Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute. If you are interested in summaries of scientific publications on the topic of oats and celiac disease, we have an entire category dedicated to it which is here: https://www.celiac.com/celiac-disease/oats-and-celiac-disease-are-they-gluten-free/
