Hi and thank you in advance for reading my post. I work in collegiate athletics coaching and a member of my team has Celiac disease. We will travel extensively this Spring (by plane on a few occasions and coach bus otherwise) and cater all of our meals. I know she's very sensitive to any gluten and so while I trust my ability to make good decisions about what food ends up on her plate, I'm concerned that 1) I can't control whether a company cross-contaminates anyway and 2) that even if they don't, if I can consistently provide her with well-balanced meals instead of always ordering her salad while the rest of the team is eating pasta.

One thought I had was to use a delivery service of pre-prepared gluten-free meals. When we fly places, it can be delivered directly to the hotel and when we bus we'll be able to have it shipped to our office and put on ice on our bus trips until used. I haven't heard of either one, so thanks for posting!

I assume your student is knowledgeable about how to screen her food, and can tell you any addition sensitivities she has.

I think it's fabulous you're helping her find good, safe food on the road.

Try www.savorymoment.com. They are a local (Seattle) company that ships all over. I've shopped there many, many times and I like their food. I've never used their delivery service but I know someone who did while they were vacationing at the beach.

      They may want to also eliminate other possible causes for your symptoms/issues and are doing additional tests.  Here is info about blood tests for celiac disease--if positive an endoscopy where biopsies of your intestinal villi are taken to confirm is the typical follow up.

      In the Europe the new protocol for making a celiac disease diagnosis in children is if their tTg-IgA (tissue transglutaminase IgA) levels are 10 times or above the positive level for celiac disease--and you are above that level. According to the latest research, if the blood test results are at certain high levels that range between 5-10 times the reference range for a positive celiac disease diagnosis, it may not be necessary to confirm the results using an endoscopy/biopsy: Blood Test Alone Can Diagnose Celiac Disease in Most Children and Adults TGA-IgA at or Above Five Times Normal Limit in Kids Indicates Celiac Disease in Nearly All Cases No More Biopsies to Diagnose Celiac Disease in Children! May I ask why you've had so many past tTg-IgA tests done, and many of them seem to have been done 3 times during short time intervals?

      @JettaGirl, "Coeliac" is the British spelling of "celiac". Same disease.

      This may sound ridiculous but is this supposed to say Celiacs? I looked up Coeliacs because you never know, there’s a lot of diseases related to a disease that they come up with similar names for. It’s probably meant to say Celiacs but I just wanted to confirm.

      I was told it was to see how much damage has been caused. But just told CT with contrast not any other name for it.
