Flax Waffle

Does anyone have a recipe for a flax meal waffle or just a few flours in it? My daughter cannot have corn, rice or almond. Thanks.

I don't really have a recipe since i always use almond flour but once when I used a little bit of flax in my waffles it totally ruined my waffle iron from burning and sticking. So, there are tons of flour options out there like sorghum, millet, tapioca, arrowroot etc. just sub sorghum for rice and arrowroot for corn starch and you're good with whatever gluten-free recipe you can find. Google is helpful.

I never tried making waffles out of them, but I have a great recipe for buckwheat pancakes that's got no rice, corn or almond.

Be aware that baking powder generally contains corn. If you can't find corn-free baking powder, you can get the same result by adding cream of tartar to the baking soda (2 parts cream of tartar to 1 part baking soda).

Ingredients

1 cup buckwheat flour

2 tablespoons brown sugar

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1/8 teaspoon cinnamon

1/8 teaspoon nutmeg

1/8 teaspoon clove

1 egg

1 cup low-fat buttermilk

1 tablespoon butter, melted

Instructions

Combine dry ingredients in large bowl.

Whisk remaining ingredients together; stir into dry mixture just until moistened.

Pour batter by ¼ cupfuls onto a hot nonstick griddle coated with nonstick cooking spray.

Turn when bubbles form on top of pancakes; cook until second side is golden brown.

I use almond or rice milk since I can't do dairy, but you didn't mention dairy, so you should be OK.

If you're not using buttermilk, add a little bit of lemon juice or orange juice for acid to help them rise better.

      Absolutely my point with Kerrigan, the owner. She stood to secure many years of faithful patronage by simply inviting us in for a pastry or lunch. Or by simply producing another $50 e-card based on trust. We would have been highly satisfied. We are limited to a few restaurants in the area, and that would have been one. It was very disappointing, esp to my wife, to realize we can't patronize the place anymore.

      You would think any business would see the wisdom of honoring a $50 gift certificate on the basis of customer satisfaction alone, apart from any questions about software glitches.

      So there was no physical, plastic card involved, correct?

      When my wife attempted to open the online card in the store with a cashier, it would not work. We then showed the owner the link to the card, the online receipt that I got upon purchase, and even my bank statement confirming the purchase. That did not satisfy her, since she said she needed the link to open to reveal the gift ID num. They even admitted they had a systems problem around that time.
