Coconut Bread Recipe?

I have not been able to find my coconut bread in any of the city's shops, and need to make some of my own because that is the sole bread I am allowed to eat in my grain-free diet.

Anyone here has a recipe? I would like something with egg whites because I like the fluffiness they produce :) even non-sugar added muffins would do (I could use those as buns/rolls).

If you can do almonds, elanaspantry.com has a number of Open Original Shared Link, Open Original Shared Link, and Open Original Shared Link recipes based on almond meal and coconut flour. I think all of her recipes are paleo.

Edit to add: I haven't used this site as much, but the spunky coconut has a number of Open Original Shared Linkrecipes as well, and I think they're grain free. She does often use things like tapioca along with nut and coconut flours.

Thank you! I cannot do tapioca and almonds... I'd looked through the spunky coconut's website, but I am really looking for a much plainer kind of bread :)

I once copied down a coconut bread recipe from a coconut site I visited. However, I have never gotten around yet to trying it. But I will put it below in case it may be of some help.

3/4 cup sifted coconut flour

1/2 cup melted butter or coconut oil

6 eggs

2 tablespoons agave or honey

1/2 teaspoon salt

1 teaspoon baking powder.

Blend together eggs, butter or coconut oil, agave or honey, and salt.

Combine coconut flour with baking powder and whisk thoroughly into batter until there are no lumps.

Pour into greased 9 by 5 by 3 inch or smaller loaf pan and bake at 350 for 40 minutes.

Remove from pan and cool on rack.

Thanks, I will keep in mind for when I make a sweeter bread.

For now I have been making loaves with 3/4 cups of coconut flour, 2 3/4 cups of egg whites (whipped - I add some cream of tartar and vinegar to stabliize them), 4 tsp of psyllium powder, a pinch of salt, a tbsp coconut or olive oil, and baking powder. I pour it into a narrow rectangular pan. It needs to bake for a pretty long time, 1.5 hours at 350 degrees (but I have an old oven, so it may be more). So far so good - it has a golden crust, nicely "broken" in the middle like some bakery breads, and an airy, white texture inside.

I love both the Spunky Coconut and Elana's Pantry websites! I have made Elana's "paleo bread" several times. It was pretty good, although it didn't rise that much. So I think way better with butter or peanut butter on it vs. making a sandwich. I can't seem to keep grapeseed oil around without it going rancid, so I subbed coconut oil. I also just got a cookbook called "Paleo Comfort Foods". They have a good recipe called "Basic bread loaf". I did add 1/4 c coconut oil to that recipe b/c it looked like it'd be a little dry without it. My very picky 4 year old ate it, so I'd call that a success!

I am glad you have come upon a workable coconut bread recipe for yourself. It is such a challenge when you have a lot of dietary restrictions. My body is also trying to kill me. I refer to my condition as the disease of a thousand tortures. :)

Kelleybean...my grapeseed oil says to use within 10 to 12 weeks of opening, or refrigerate. I do keep most of my variety of oils in the refrigerator. On a different but related note my daughter who worked in one of those body care product shops told me that the products which contained grapeseed oil were discontinued because of its going rancid.

It is iodine that causes apoptosis, killing old and defective cells.  Not enough vitamin D to control the immune system and not enough iodine to do the job.  I had a sebaceous cyst, my seventh facial cyst, in 2014.  It started looking like a blackhead, but grew (Third eye blind).  All my 7 previous cysts had drained and healed normally.  When I drained this, there was a hairball the size of a BB and it would not heal.  This was one of many reasons I started Gluten Free.  I chose to not have it surgically removed, because I realized I had nutrient deficiencies that were causing slow healing.  By 2015 I realized it was Iodine deficiency and started eating seaweed, which helped my muscle tone, but not the healing.  The warnings on iodine from the gov't were so scary, I was afraid to use them.  Turns out it is all based on one study on rats in 1948. "The Wolff-Chaikoff Effect:   Crying Wolf?"   Last year I started taking 600 mcg a day and it is reversing my glaucoma and fixing muscle tone, hair nails and skin all returning to healthy,  Brain fog, which had improved dramatically on Gluten Free diet, my thinking got even clearer with the iodine. Finally the cyst my bellwether since 2014, began to heal.  So I had it biopsied  in July 2025, came back basal cell carcinoma.  With the Iodine (Piping Rock Liquid Iodine 12 drops a day 😃 = 600 mcg) is healing normally and I have a follow up in December.  By then it will have healed.  It is scabbing over like a normal wound.  In 1970 the US stopped using Iodine as a dough modifier.  The daily intake of Iodine dropped in the US 50% between 1970 and 1984.  Also, prescriptions for thyroxine have doubled.  150 mcg the RDA is not enough for anything more than preventing goiter.  Growing up in the sixties just 2 slices of bread had 200 micrograms of iodine, add a glass of milk and iodized salt and you're at 300 mcg a day.  The safe upper tolerable limit in the US is 1000 mcg.  In Japan it is 3000 mcg and the average Japanese, traditional diet, averages above 1000 mcg.  Remember when in the 80's our schools were loosing competitions to Japanese schools?  Iodine.  And Japan has 50% less breast cancer.  Nicer hair nails and skin.  It the US our kids are getting dumber, more flabby.  Fertility is dependant on enough iodine, also. 600 mcg.

      Your high lactulose test, indicating out of control Small Itenstinal Bacterial O,vergrowth is one symptom.  You likely have low vitamin D, another symptom.  Unless you get lots of sun.   Celiac Disease is a disease of malabsorption, often leading to subclinical vitamin deficiencies.  A lot of people have these symptoms just before an acute phase of Celiac Disease.  Each of the symptoms can have multiple causes that are not celiac disease,  but when you start having multiple symptoms,  and each symptom is treated as a separate disease,  you have to think, maybe these are all one cause. celiac disease. There is a misconception that Celiac Disease is  a gastrointestinal disease and symptoms are only gastro related.  Wrong.  It is an autoimmune disease and has many symptoms that usually are disregarded.  I made that mistake until 63 y.o.  It can cause a dermatitis herpetiformis rash,  white spots on the brain.  It caused my alcoholism, arthritis, congested sineses, protein spots on my contacts lenses, swollen prostate, symptoms that are "part of aging". You may be tolerating gluten, the damage will happen. Of curiosity though, your age, sex, are you outside a lot without sunscreen?

      It would be interesting to see if you were tested again for blood antibodies after abandoning the gluten free diet for several weeks to a few months what the results would be. Don't misunderstand me. I'm not necessarily suggesting you do this but it is an option to think about. I guess I'm saying there is a question in my mind as to whether you actually ever had celiac disease. As I said above, the blood antibody testing can yield false positives. And it is also true that celiac-like symptoms can be produced by other medical conditions.

      Thank you for the reply In the early 2000's I did not have the endoscopy nor the biopsy I do not have those initial records I have only consulted a GI drs in the USA
