  3. I have found that xanthan gum helps a recipe that is crumbly. For this recipe I would add 1/2 tsp. of xanthan gum in your dry ingredients. I don't use as much as most recipes call for because I think they turn out gummy if I use too much.
  4. Regarding your question about eating breakfast out - you need to be aware that some restaurants use egg substitutes that can contain gluten.
  5. My family likes this Mexican style dip (although we eat it as a meal) that I make. Ground turkey cooked crumbled 1 can refried beans 1 jar salsa Mix beans and salsa into meat and heat it all up. I serve it with tortilla or corn chips and a salad.
  6. When I was having this problem (before going gluten-free) my chiropractor suggested Vitamin B Complex and it helped. Maybe because of the malabsorption? BTW it was in my left eye too and I haven't had a problem since going gluten-free.
  7. Hi Kbabe1968, I have finally been mastering baking some gluten free recipes. The best ones I have found are on www.eatingglutenfree.com . I highly recommend the carrot cake, chocolate cake, and the pumpkin roll. People will never know that it's any different than any other homemade cake. Good luck

Featherlight mix 1 C rice flour 1 C corn starch 1 C tapioca starch 1 T potato flour (not starch) gluten-free mix 3 C rice flour 1 C potato starch (not flour) 1/2 C tapioca starch I found these and several great recipes on this website: www.eatingglutenfree.com
  10. The cc issue sounded way over the top when I first started eating gluten-free but after only 6 months I know when I've had even a trace of gluten. As people have already posted - be sure to check everything for gluten and eliminate any sources of cc along with an elimination diet. Keep being a loving and supportive guy. It does get easier.
