  1. To the person that has DQ1 & DQ3, I think that if you will do some research that you will find that double DQ1 is worse than having only a DQ1 & a DQ3. I repeat if you have double DQ1 you can get villi atrophy & I think it is more than 1% of the double DQ1 people.. And if you happen to be that 1% of anything it becomes 100% to you. Those...
  2. Karen Lee, I have two DQ1 genes - the gluten sensitive genes. My mother died of colon cancer when she was about 75. Having two DQ1 genes is very bad - you get all the intestinal stuff which can be diarrhea or constipation and you also get the neurological stuff, and you get the other autoimmune diseases. One of my sisters has rheumatoid arthritis among...
  3. Quick, is fruit with nuts, almonds, pecans, or walnuts Mission Brand White Corn Tortillas heated up in a skillet wrapped around almost anything. I like: PB & Jelly with bacon bacon with bean dip & Cilantro & minced onions Ham & salad greens chopped chicken with onions and cilantro Any of the above on a Lundberg Rice Chip I also...
  4. cross contamination is so awful... I get sick from just touching something that someone else touched with wheaty hands - unless I remember to wash my hands before touching my food. Maybe get your own little refrigerator to keep your food in. Are you cooking in teflon pans or cast iron? cutting board - new? Only you use it? Is there any flour in...
  5. I would just like to say it sounds like Gabby & Nancy M are posting along my same train of thought. Anyone that has only been gluten-free for a month or so is probably in all likely hood not really totally gluten-free yet, it takes a while to sort it all out. This is especially true if there are people living in the house that are eating gluten. There...
  6. Wanted to second the Lundberg Rice Cakes & Rice Chips are the way to go. Also, did you get the peanut butter from a fresh jar or from a jar that someone had stuck a knife in it while making a wheat sandwich or peanut butter on wheat crackers? Those teeny little specks are enough to make you sick. For chicken, I cook up a bunch then freeze in single...
  7. Sorry you are having such a rough time. When I get depressed I eat an orange!!! Hard to be unhappy with all those little bursts of goodness from one little orange section. I came home from work last night & made a great stir fry in 30 minutes & I was not even prepared. Cooked fresh rice in the microwave, 20 minutes, although I had some in...
  8. Ricado, you have a lot to learn 97% gluten free will NOT keep you 97% healthy, it will just keep you sick. less than 1/8 teaspoon of gluten is enough to damage your intestines. I think that the only worthwhile test is the gene test from Enterolab, because you will find out which genes you have. If you have DQ1, the gluten intolerant gene, IMO that...
  9. Well it seems that my well intentioned wording was not well received. Re the no toast, it is the most common way to get cross contaminated, if you do not keep a gluten-free kitchen you are going to be constantly sick. Your husband could also have celiac and not have any symptoms. If he wants a healthy happy wife I am sure that he would be willing to have...
  10. I think that if you grind your teeth in the day that you are grinding your teeth at night also. I wear a bite guard every night. It keeps the TMJ under control. I also think that if you wear one at night, or when at home also at first, that your daytime tooth grinding will get better.
  11. Dear Monica, You have a problem somewhere & you need to be actively trying to figure out what it is. Have you had blood work run & a general physical? Allergy Food tests? Tested for parasites? Are you taking a vitamin B12 everyday? I cannot say anything about the probiotics, because I have never taken them & would never take anything...
