Jerry, I did the Enterolab and got positive results. I immediately cut out gluten, casien, soy and yeast based on these results. And while I felt a lot better, something was still not right. So I had ELISA testing (blood) done through York laboratories. That showed me that I was also sensitive to almonds (was eating almond butter every day!) and shellfish... -

But one thing that comes to mind is whether you have a marble slab that you could refrigerate to use to keep the dough cold while doing your cutouts. I questioned the Enterolab folk about this as my test showed elevated antibodies to soy. They recommended I stay away from soybean oil as well. The only thing they said that might be okay is soy lecithin because it has been so heavily "distilled" (not sure if that is the right term). -

Shannon, There actually is a "Living Gluten-Free for Dummies" book available. It is worth reading - I found it combined information from a lot of sources into one book. I did both the Enterolab and the York tests with consistent results between the 2 tests. Since you are in Spain, it would probably much easier for you to do the York test. I had a little problem getting my sample shipped to England. DHL wouldn't accept my package because I didn't have the "proper" packaging that met some weird international standard - nor... -

Don't throw the package out - take it back to Whole Foods and get your $$$ back. They have a satisfaction guaranteed policy. I've taken back several supplements that didn't agree with me and got my money back without any hassle. -
