A lot of what you use for lunches will be dependent on where you live and what resources are available to you. Where I live we have Fred Meyers Health Food section and a few different Health Food stores and a great Health Food Cooperative...we also live within close travel to Trader Joes and other Health Food stores. There are thousands of ingredients in our foods that are not legally required to be on the labels. Also, I think it is wise for us to be especially aware of eating nutritionally sound foods. Wow...I think you're over most of our heads with this kind of urgent medical intervention. What I've observed is that without doctor's orders, it is nearly impossible to get a special diet. So the key would probably be to locate a doctor that would listen and help....does their insurance cover a natural doctor, or could you maybe contact someone elsewhere... -

Amber Don't bother with the tests for celiac disease....I think the medical community is making a killing off testing and retesting... Sorry you've been through so much. My daughter was on swim team in Moscow Idaho in Middle School when we found out that the rash she had was from gluten. My mother nearly died and was down to 80 lbs from her usual hefty self, she was being fed intraveineously. Hello Sorry, I'm not in Idaho, but I went to college there in Moscow, BS School of Communications 1994. I lived there when I learned I had celiac disease.....hard to find resources there...you'll probably have to order them over the internet or from a local expensive place. Good luck to you...
