    I have another recipe for you all. I made this last night and it is soooo good.

    Sausage and Cheese Breakfast Cups

    Makes 6 cups

    Ingredients

    4 ounces turkey sausage or crumbled turkey bacon

    1/2 green bell pepper, chopped

    1/4 onion, chopped

    5 large eggs

    1 can (12 ounces) sliced mushrooms, drained

    1/2 cup (2 ounces) shredded reduced-fat Cheddar cheese

    Instructions

    Preheat the oven to 350

  2. OK, I love lima beans and chickpeas and lintels. But I have a hard time with the meat - are we allowed canned tuna or does it have to be like beef? I do have some ground beef in the freezer I could do. And Dairy - hate milk. Is cheese or cottage cheese allowed?

    Any ideas with any of that? I'm a mess. I like roasted veggies drizzled w/ olive oil. I guess that would work.

    You can have canned tuna. Cheese (low fat) and cottage cheese are also allowed. If you send me your email address I can send you the phase 1 list of foods to enjoy and avoid.

    These are some of the tuna/vegetable based recipes I found so far. If you like chicken there's a lot of yummy recipes.

    White Bean and Tuna Salad

    Serves 2

    Ingredients

    1 6-ounce can chunk light tuna, drained

    1 cup rinsed canned small white beans

    5 cherry tomatoes, quartered

    2 scallions, sliced (about 1⁄4 cup)

    1 tablespoon extra-virgin olive oil

    1 tablespoon lemon juice

    1⁄8 teaspoon salt

    Freshly ground pepper to taste

    Instructions

    Combine tuna, beans, tomatoes, scallions, oil, lemon juice, salt and pepper in a medium bowl. Stir gently to combine. Refrigerate until ready to serve.

    Chickpea and Red Onion Salad

    serves 2

    Ingredients

    2 tablespoons slivered red onion

    1/2 cup rinsed, drained chickpeas

    1/4 cup chopped fresh parsley

    1 tablespoon lemon juice

    1 1/2 teaspoons olive oil, preferably extra-virgin

    1 1/2 teaspoons drained capers, rinsed and coarsely chopped

    Salt & freshly ground black pepper to taste

    Red-leaf lettuce leaves

    Instructions

    In a medium-sized bowl, cover onions with cold water and let soak for 10 minutes. Drain well and place in a salad bowl. Add chickpeas, parsley, lemon juice, oil, and capers; stir to combine. Season with salt and pepper. Serve on lettuce leaves.

  3. OK, I'm excited. But I'm a huge diet screw up because I always end up starving myself. And I think I already screwed up today. I'm looking at my desk and I see my Diet coke, decaf herbal tea, bottle of water, and the gluten free/lactose free slimfast I had for breakfast and 1 for lunch - so I ruined today. Any suggestions on how I can do dinner right?

    The great thing about this diet is how forgiving it is. At least that's been my experience. When I did it the first time I found I could cheat once a week and not ruin the whole thing. The diet was set up knowing that we will make mistakes and that we are only human. I think that's what I like best about it. Dr. A really gets it.

    What are you in the mood for tonight? I will look up some Phase 1 recipes for you.

    Dinner is:

    Protein - Quantity is not limited. Start with a 3 oz. portion, eat slowly, go back for seconds if still hungry.

    Vegetables - Minimum 2 cups. You are encouraged to include a serving of beans (1/3-1/2 cup) as part of your vegetables.

    Milk/Dairy - 2 cups allowed daily (including yogurt)

    Fat - 1 Tbsp mayonnaise, trans-free margarine or oil, or 2 Tbsp salad dressing

  4. Thanks! I'm in, but I just read up about Phase I and it says NO ALCOHOL at all. As of Saturday, I am starting a vacation with wine tasting and all that implies. I guess it would be a waste of time to do it this week and blow it next week?

    You could start it this week and then maybe just do an extra week of Phase 1. But if you want to wait until after your vacation (which is completely understandable) we'll be right here. Just join us then.

  5. Wait! Don't leave me out. I confess I don't know much about the South Beach Diet, but I'ld like to give it a try. I keep looking for diet/exercise buddies, but I never have any luck! Can I do it, too?

    You can definitely join us! Glad to have you on board. South Beach is so easy to do. You won't even feel like you are dieting. I joined South Beach Diet online so if anyone needs any info just let me know.

    Today is the start of Phase 1 for me. My goal is to lose 25 pounds.

    I was so excited to find your thread! I've done South Beach in the past and lost 30 pounds without even exercising. It was really easy. I want to start it up again but have some questions. In Phase 2 what do you do about the starches (breads, cereals, etc)? When I did the diet before I used whole wheat products. So I guess my question is - can you substitute gluten free bread or cereal? Or do you just not have any at all and basically stay in Phase 1?

  7. I've dined at Stout a number of times and I just wanted to let everyone know how superbly wonderful this place is. They are so accomodating and are really willing to work with you to have a gluten free dining experience. When I go I email Gail (I think she's the owner, but she might be the manager) and let her know I am coming. Here's an one of the emails I've received from them:

    Hi Beth,

    Thank you for your recent inquiry into STOUT. Here are the answers to some of your questions:

    You can order the Chicken Salad as it is on the menu. There are no croutons in this salad and no gluten in the dressing (we make all of our dressings in house). Further if you would like we would be happy to customize a salad for you using any of the vegetables, fruit or proteins that we have in stock. ie. we can grill any fish (tuna, salmon etc. over greens w/ vegetable and or fruit). Additionally, if you don't want to have one of our dressings we can bring you Balsamic Vinegar and Extra Virgin Olive Oil on the side.

    If you don't want a salad we would also be happy to Grill or Sautee some fish, chicken or steak and serve it with some vegetables.

    Our regular French fries are seasoned but they are not coated with anything. Our Sweet Potato fries are sprinkled with a bit of corn starch to prevent them from getting soggy. Unfortunately the fryer that we use for the French Fries is also used for the Sweet Potato fries.

    I would be happy to customize a dish for you that complies with your restrictions. You can e-mail or phone me @ #212/629-6191 anytime and we can easily plan a meal for you.

    Although we typically do not allow outside food or beverages in STOUT, I would be happy to make an exception for you. If you would like to bring in your own meal we would be happy to plate it for you and serve it along with your friends food.

  8. I love suon nuong which is charcoal grilled pork chops that have been marinated in lemon grass, honey or sugar, garlic and fish sauce. Sooooo good. Highly recommend it. I get it every time I have Vietnamese. I like it so much I even make it on the grill at home. I think it should be safe. Make sure the fish sauce is gluten free. Com Chien which is a type of fried rice and Pho Xao which are fried rice noodles with shrimp, egg, peanuts and sprouts is also really good. I'd ask about the noodles though and what else has been fried in the oil.

  9. One of my dearest friends is having her daughter's first birthday party at La Lanterna in Yonkers. Has anyone eaten there? What did you get? I sent an email over to them explaining my situation and I hope they are willing to accomodate me. I'd really hate to miss this party.

  10. Before going gluten free my abdomen was constantly distended. I could have passed for a pregnant woman it was so bad. Once I went gluten free my abdomen flattened out. All was fine and good until I went for my endoscopy in mid-April. I've been completely bloated since. Anyone else have this reaction? I haven't had any gluten since then. All I can think of is maybe the protonixs or pepcid ac that I am taking? (The doctor found a couple of ulcers when he was doing the test.) Nothing else has changed- not my diet, toiletries, etc. How do I get rid of this?

  11. My bloodtest came back negative, but my doctor felt that because of my symptoms and relief from not eating gluten that we should go ahead with the endoscopy and biopsy. To give you a little background, I was diagnosed with IBS two years ago, but never got any better no matter what I tried for it. This January I decided to try a gluten free diet to see if that would help and it worked wonders. Anyway, the biopsy results also came back negative. (Maybe because I was gluten free for over 3 months when I had it done?) The doctor diagnosed me as gluten intolerant due to dietary results. So my question is - even though my tests came back negative, could I have had celiacs before and just no longer had any damage or antibodies when the testing was done? Or is that not possible and the test would have shown that I had it? Can your villi heal that quickly? All I know is that gluten and I are not friends.

    Sorry if this is stupid or has been answered before.

  12. I was getting terrible cystic acne until I went gluten free. It mostly went away when I switched cleansers. But what has really cleared up my skin and gotten rid of acne marks is Derma | Style by Lumiport Portable Acne Light Pen. I got it at drugstore.com. It's pretty expensive but I have to tell you it's completely worth every penny. I decided to get it after reading so many positive reviews about it. It takes my skin forever to heal from any breakouts. This pen reduces the size and redness so quickly.
