My son's blood tests show he is off on some vitamins and serum protein. Basically, I believe that would be malabsorption. I don't believe it is anything that he is getting gluttened accidentally by. I've gone over and over what he eats here, he is highly supervised anywhere else. I don't have any regular flour in the house anymore - doing all the baking...

We are mostly gluten-free. My husband and I have oatmeal in the mornings - use the same pan, etc. everyday. We also have premade tortillas for when it is just us snacking. Here's my best answer and hope I don't lead you astray. Take the total number of flour + starch cups and substitute with your flour mix. Oops, forgot to add.... In case you are certain you are gluten intolerant and not celiac and want to try Glutenease, do check out "Go With Your Gut" by Karen DeSilva. Great product, but not for Celiacs!! I have been using enzymes with my son to aid in his digestion. They have been helpful in getting him to have more normal bowel movements. It would depend on whether they have the same ingredients or not. Sorry if I mistated earlier, but the better products by Houston or Enzymedica usually have more actual enzymes in one capsule. That means you end up getting more or the same in the long run. Also, the enzymes I use for my son have no other fillers - no citric acid, fructose, etc. You mentioned... -

I forgot to add something I thought was interesting after reading "Go With Your Gut" by Karen DeFelice. In her chapter on digestion, she explains that lactase forms on the villi of the intestines. When these are damaged the body can't digest lactose like it should. Helps explain why a lot of people who are gluten intolerant or celiac can't have dairy either... -

I don't know of a cooking class but some things that might be good are stir fry (San J makes a gluten free soy sauce-I found it at Safeway) and things like spaghetti (buy Tinkyada noodles from Vitacost online for less). Soda bread sounds like a good suggestion - baking soda and an acid like buttermilk will be good to give it lightness. Try using flours like Teff, millet, or buckwheat. They aren't as grainy as rice and aren't as dense which is the way gluten-free bread tends to be without yeast. For bread other than sandwich/toast bread you can try a carrot cake recipe... -
