  1. I teach high school. I teach Latin for part of the day and work with dyslexic students for the rest. Most of the time I'm proud to be a teacher. We do a very important job and all that jazz. But because I believe many things need to be changed about the way we teach children and young adults, sometimes I'm not proud of "teaching" as a profession itself...
  2. I'm just curious if y'all notice the same thing. Once I know I've been glutened, I can almost keep time by my symptoms because they're like clockwork. ***TMI WARNING*** Bloating-> gas-> loose stools-> neuro/cognitive/emotional symptoms-> GI tract starts feeling better-> itching skin & bleeding gums-> muscle & joint aches-...
  3. Bento Update: (still nothing picture-worthy; too busy!) Today we had the most wonderful bento. I put deli meats (and cheeses as well for hubby only), almonds, grape tomatoes, baby spinach, strawberries, salad dressing and corn chips in our boxes. It was all "finger food" but it was kind of like a lunchable. I had fun wrapping deli meat around grape...
  4. I had four wisdom teeth pulled at once with only local injections. No problem. But the EGD kicks off your gag reflex really badly. (FWIW, I've had an EGD but they weren't looking for celiac.) I was in twilight sleep for mine and it was still horrible. Not pain, really. Think of the worst nausea you've ever had and multiply it by 10. Plan some time...
  5. Sounds like my sister in law. With her last baby, she had us all at her house playing video games practically until pushing. Then she went to the hospital. Now I can add "watching woman in labor play Guitar Hero and kick my butt at it" to my life's resume. It sure was more fun for her than laying in a hospital bed for hours, though!
  6. False negatives are always possible (i.e. you have celiac disease as defined by standard medicine but for whatever reason the tests don't pick up on it). It's also very possible you have none of the hallmarks of "diagnoseable" celiac disease but are very sensitive to gluten. I got the Enterolab test because I needed to have the data for motivation. I...
  7. Before going gluten free, all days were "symptomatic" at least to some degree. Within a week of going gluten free, I started having "symptom free" days every few days. Now I'm mostly symptom free except when I gluten myself. Although I don't think I'm fully healed yet because I still tire easily. Welcome to the gluten free club!
  8. Hi! You can use these containers in the microwave. They are also dishwasher safe if you only put them in the top drawer of the dishwasher. My husband has taken lots of leftovers and reheated them. We've also washed them in the dishwasher about seven times. So far, no warping. It's really good quality plastic. If you're using gladware or similar,...
  9. I read the whole thread and can't help myself from adding, even though the "friend" is a lost cause. Before diagnosis, I was a hard-core bread baker. Every book, TV show, etc. on baking bread talks about "developing the gluten." It's a very common baking term, in addition to a mechanical action as bump pointed out. A bunch of people have already described...
  10. I don't need seaweed paper, I'm just using it for decoration. Yes, get the "sushi" rice. It naturally sticks together. You don't even really need to "smoosh" it. I'm using metal cookie cutters for cutting through corn tortillas, etc. I got them for under $10 at Williams-Sonoma. It's a tin with 12 little shapes in it. For molding the farm animals...
  11. It's actually saving me time on the food prep end. I spend very little time packing the food, even when I'm using molds and cookie cutters. The one day that I played with seaweed, I probably spent a good hour on all three lunches, but I WANTED to spend that time. It was very "zen." If you just go with simple foods and not fancy decorations, you'll find...
  12. The whipped egg whites provide more leavening action. *I* can tell the difference but I also might be extra picky. Back in my wheat-OK days I skipped the egg white step when I was in a hurry. And it always made the waffle feel "flat." Kind of like the difference between a fresh can of soda and one you put in the fridge to save for later.
  13. Cool! If it had just been my husband and I, we probably would have gone with Mr. Bento. But Laptop Lunch is better for River, definitely. It's good that I can use the same "procedure" to set up all the lunches so it's good that all of ours are the same. We expect a report in 5-9 days!
  14. We have had no "food migration" at all. In fact I've been surprised that my food decorations have stayed in tact. Definitely no leaking at all from the small box.
  15. Before I identified gluten as the source of my health issues, I considered myself pretty healthy. I just thought my issues were "normal for me." As they slowly escalated, my husband kept pointing out that it just wasn't normal to have X number of illnesses Y percent of the time. If I hadn't stumbled on a magazine article about celiac disease at my chiropractor...
  16. Here's what I did (sorry it's not too scientific): 1. separate 4 eggs (yes, 4. I know it's a lot!) 2. set yolks aside 3. whip whites to stiff peaks, set aside 4. melt 4 TBSP "buttery stick" or similar 5. slowly whip melted "butter" into yolks 6. mix in 1 cup soy milk (or whatever) 7. add 1/2 tsp xanthan gum 8. add 1/4 tsp salt 9. add 2 TBSP sugar...
  17. Hi Kassandra! I don't think the tuna flavor carries over, but someone with a more sensitive palate than me might think so. You can always do something that "marries well" with strawberries, though. Like maybe nut butter or a BLT. (Bacon and strawberries go well together, isn't that weird?) Thanks for the compliment on my pics. I'm such a noob...
  18. shayesmom - OMG!!! We had a whole crowd at our [grown up] lunch table today to see what we packed. Today's pics, if anyone wants them: River's Bento (River is my daughter's name.) Dad's Bento Mom's Bento Everyone got tuna salad. Mom's & River's are in trays for dipping with wasabi rice crackers (OMG! sooooo good!) and Dad's is in his onigiri...
  19. At a local Austin, Texas store called "Toy Joy." But the brand is Crocodile Creek. I bet other stores carry the brand.
  20. DAUGHTER'S BENTO REPORT: She says I packed too much food. Easy to fix that one. Her classmates and counselors oohed and ahhed over it and made her feel special. She gave them a mini-lecture on bento and onigiri and her special diet. Neat.
  21. FIRST BENTO REPORT: We haven't picked up our daughter yet, but everyone at our dyslexia training was **so jealous** over our lunches. We got comments like "how organized!" and "are you bringing an extra one for me tomorrow?" and "where can I buy that?" They are very much worth the money. They'll pay for themselves in plastic bags I don't have to buy...
  22. Dad's bento (leftover arroz con pollo, spinach salad, dressing in the small container, rice with tortilla cutout & paprika, carrots, raisins, cashews, chocolate chips, tortilla along side the silverware) Open Original Shared Link Mom's bento: (cow shaped PB&J onigiri w/ chocolate chip eyes & raspberry nostrils, raspberries, blueberries,...
  23. In my excitement, I didn't check to see if there was already a thread about bento. And of course there is... I hope everyone can forgive my exuberance. I'm gonna get pictures of tomorrow's bentos for ya, also. Please stand by...
  24. My husband and I both teach high school, so we're off for the summer. But starting tomorrow and for three weeks, we are attending a training and our 8 year old will be in YMCA camp. So far, all of her restricted diet has taken place outside of school, since school let out at the end of May. For the last few weeks, I've been dreading the lunch question...
