  1. you could be allergic/sensitive to xantham gum -- many people are actually. Plus the gums (xantham, guar, etc.) are known to have laxative effects on the body due to their nature of being gums. use gums, (which are -not- necessary in gluten-free baking), sparingly, especially if you find yourself sensitive to them

  4. Quinoa is a safe grain -- the transport and cultivation of quinoa makes it often open to cross-contamination - -no matter how much you wash it. Make sure your quinoa if sourced gluten free otherwise you are eating wheat.
  5. there is clean and then there is clean. no need for new pans if you truly clean them before eat and every use. (and as said previously that they are not scratched -- not without a commercial dishwasher with very high water pressure and which reaches very high water temps) for the home user you must clean with hot soapy water -- dishwashers with bleach...

  11. It is certainly amazing how so many of us have such extreme views on our favorites and least favorites -- of the same products! Some love rice products -- some hate them. Some love Amy's some hate Amy's. But it's great -- I think it shows that gluten-free products are just as diverse as non-gluten-free products -- I mean this reaction doesn't occur that...

My husband and I are spending two weeks traveling from NY to Nova Scotia and we are hoping to find gluten free places to eat out, (we found a B& that says they will accommodate gluten-free so we're excited about that, but anyone have ideas for restaurants?
