  1. Most see at least SOME improvement in 1-3 weeks. A few are noticeably better within a couple of days... others take longer. To some degree it seems to depend on how much damage there is. Hopefully your little guy is young enough that there isn't too much damage. The jury is still out on gluten in breastmilk. You will find "medical experts" on both...
  2. Maybe they had too many problems with cross-contamination, or mistakes being made in the kitchen. I think a lot of places are scared to say something is gluten-free because they don't wanna get sued if someone gets sick.
  3. The pre-mixed baking mixes are expensive because they can be (low volume, more stringent controls in the factory). And to be honest, sometimes they are worth it for those of us who simply don't have time (or patience) to bake everything from scratch. If you use enough to buy in bulk, sometimes you can buy direct from the manufacturer on their website. ...
  4. Could her pain actually be a side effect of the birth control pills? Did the increase in pain start at the same time as the pills? I know several people who have major problems with birth control pills, and cannot use them. I have a cousin who gets violently ill when she uses ANY hormonal birth control! Also, are the pills free of any "problem" foods...
  5. My 6yr old daughter, after watching her daddy make regular brownies, said, "Daddy, it isn't nice of you to make stuff that mommy can't have!" And then refused to eat the brownies until I told her it was okay because I had some gluten-free cookies that I could eat. She's such a sweetie!
  6. Do you spread the dough out on the parchment paper and then transfer to the pan? Or is the parchment paper between the dough and pan when you cook it? Sorry if these are stupid questions... I have never been very good at cooking or baking... but I'm learning!
  7. I would definitely try to fight that... 20 years ago doctors routinely diagnosed celiac in children and then told the parents that kiddo would probably outgrow it. Now we know that celiac is not something you can outgrow... sometimes the symptoms go away for a while... but you never outgrow it. Are your parents still around? Would they be willing to...
  8. Hopefully your school considers dysgraphia a learning disability. Ours doesn't. They say that it is a fine-motor control issue, not a learning disability. They say that we need to make her practice writing at home more... yeah, I'm gonna make her write after school when her hand hurts so bad she doesn't want to hold anything in her hand... RIGHT! Another...
  9. I followed the instructions exactly like it said on the bag, except that I tried to make 1 16" pizza instead of 2 12" pizzas, because I didn't have 2 gluten-free pizza pans. Well, I couldn't get the dough to spread out enough to cover the pan. Anything I touched the dough with, it stuck. My husband even covered his hands in olive oil and tried to smush...
  10. Sorry, 100% gluten free is the only way to make the diet work. Most people actually get MORE sensitive to it the longer they are on the diet... that's not a bad thing, it just means that your intestines have healed to the point where being damaged in no longer their normal state! A lot of people go "gluten-light" initially, mostly because they aren't...
  11. around here, we tend to call IBS a symptom, not the cause As for going gluten-free, the best thing you can do is give it a try. I would say give the diet an honest try for 6 weeks. Chances are, you'll feel better and "discover" all kinds of symptoms that you had, but didn't really attribute to food. Most people start feeling at least a little better...
  12. I suffered at the hands of an abusive father for years. He abused my mother, me, and my brother. He hit us, but what hurt the worst was the verbal abuse. He was also an alcoholic and had multiple affairs. About 6 years ago, my mother finally got up the nerve to leave him. He told her that he had Parkinson's and she had to stay and take care of him...
  13. I woke up this morning with EXTREME lower back pain, almost couldn't walk. It subsided a bit after I used the restroom (just pee) and then a bit more after I took a shower. Then I had breakfast (Van's gluten-free waffle with apple butter and 2 small turkey sausage links). I walked upstairs to wake up my daughter and felt lightheaded when I reached the...
  14. I have this amazing ribs recipe that I want to make this weekend... it uses 1 bottle of beer. Now, the thing is, I don't really know WHY it needs beer. I could go out and get some Redbridge to use, but I don't know if it'll do the same thing... and I'm pregnant, so I won't be drinking the rest of it any time soon. I would love it if someone who knows the...
  15. When you go to see your OB, tell her that you want to have blood levels of all possible vitamins/minerals checked because of the celiac, and the fact that you just started on the gluten-free diet. That's what I did. Almost all of my levels came back low. Not dangerously low, just lower than normal, and definitely lower than she wanted to see in a pregnant...
  16. 95% accurate? That seems WAY high! If that were really the case, celiac would be extremely easy to diagnose! A LOT of people on this board have had negative bloodwork, followed by a positive biopsy. The biopsy is still the "gold standard" for diagnosing celiac (in the medical community). On this board, the gold standard seems to be, do gluten-free for...
  17. Your daughter's friends MAY be old enough to help! I have seen at least a few posts where someone said their 13yr old's friends won't LET her eat something that has gluten in it. Also, if your daughter is still thinking that she's going to outgrow this and wants to know as soon as that happens, maybe you could set up a schedule where every couple of...
  18. Do you have any pictures of your daughter from when she was sick? Especially ones that REALLY show her pot belly? And any other physical signs of her illness? In the pre-teen years, a lot of girls are really starting to worry about their looks. I'm not saying that you should encourage her to be totally focused on looks, but if you show her some pics of...
  19. Gluten-light is what many of us did when we were told (or thought) that we had a wheat allergy... so, we cut out wheat, but still get gluten from other sources. Some people who think they are gluten free are really "gluten-light" because are getting gluten from hidden sources. A GLUTEN-LIGHT DIET IS NOT AN EFFECTIVE TREATMENT FOR CELIAC!!! Most people...
  20. I have a similar history in that I have always had random GI issues... that got MUCH worse during my 1st pregnancy and stayed bad while I was on depo-provera. Eventually I figured out that it was a "wheat allergy" and went gluten-lite. Then I stopped taking depo-provera and I found that I could "cheat" on my diet without any major side effects so I went...
  21. I love Tinkyada pasta... but I don't know why they say it can stand up to overcooking! I did the same thing as you the first time I made it. I have found that I get a much better result using their alternate cooking method (usually printed on the front of the package). Basically, you boil it for 1 minute, cover and turn off the heat. You let it sit there...
  22. I agree that things are better now than they used to be regarding labeling of allergens... BUT, for those of us who get glutened from shampoo or hairspray, obviously the 20ppm limit is too high! As for it being unreasonable to have separate facilities, there are companies that do. We pay more for their products, but we know they are safe. I, for one...
  23. I know I can't eat raw fish during pregnancy... and I know that the imitation crab stuff (which is kinda nasty anyway) has gluten. Is there anything sushi-like I can eat? Is smoked salmon okay? How about roe? I could probably get veggie rolls and roll them in roe, that might satisfy this current craving... Please help! I have never had a craving like...
  24. I agree w/ Michi8. Every pregnancy is different, so your symptoms from the 2nd or 3rd can be totally different from your 1st. Also, I had an orthoped tell me once that most pregnant women get tendonitis (to some degree) in their hips. This is because the pelvis is adjusting itself for birth, which can cause strain on the tendons. Sometimes gentle stretches...
  25. There actually is a labeling law in the works... called CODEX (I don't know what that means). Unfortunately, the FDA has decided that there is a "safe" level of gluten that will be allowed in "gluten-free" items. That safe level is, according to them, 20ppm. Well, for those of us who react to a crumb (or less!), I have to assume that 20ppm is NOT SAFE...
