  1. After being on a gluten-free diet for two years and only kind of feeling better (and hungry all the time no matter what I ate), I swtiched to a modified paleo diet and that has helped me SOOOOOOO much! I am finally maintaining my weight (dropped a couple pounds too), I'm no longer bloated and tired all the time, and my joints don't swell anymore. I don't...
  2. Did you react to most of the gluten-free starches on the market??? This is one problem I've been having-After a while I noticed small reactions to anything pre-made I bought that was labeled as gluten-free. Once I switched to a completely whole foods diet, I haven't had a problem (other than the fact that it's boring and inconvenient). Nadia
  3. I felt the same way up intil about a year and a half after my diagnosis. Yes, it sucks-in today's society food is more than a means of nourishment-it's socialable and comforting. I have forced myself to realize that "it's only food" and that there are other things in life that bring me pleasure now....It's been tough---but once you physically start feeling...
  4. Blackstrap Molassas-tons of calcium and iron (I like Plantation) I like to grind nuts because I still have a hard time with them (sensitive tummy) Avocados are great!!! Olive oil-I fry lots of stuff in it now.
  5. My abdominal pain to reactions stopped about 6 months after my diagnosis, nowadays I can only tell from fatigue and from joint pain-and migraines. I don't drink anything except water. I took lactaid without drinking any milk, on an empty stomach, no chance of anything else giving me a reaction-and had a reaction to it. Most gluten-free foods on the market...
  6. I talked with my dietician and she brought up a couple of points- My symptoms to gluten ingestion are fatigue and stiff joints these days-I haven't had the tummy issues for a couple years now. She told me to drink more water-LOTS more-and I tried that today and it helped significantly Excessive potassium (which I get a whole lot of) can cause GI problems...
  7. Personally my sleep patterns changed significantly once I was gluten free for about a year. I went from sleeping 14 or more hours a day to needing 7-9, with a significantly more active lifestyle nowadays. Whenever your body reacts to gluten, I see it-and feel like it-as though your immune system is fighting it just like a cold or the flu. That's why I slept...
  8. I've had celiac disease for a little while now-getting used to the diet and how to cope. I've determined that I'm pretty darn sensitive-I can't tolerate any of the pre-made gluten-free foods (breads, cookies, pastas, etc.). I've been doing a whole foods diet for a few months now-meat, potatoes, eggs, veggies, fruits, and am feeling great. I'm coming close...
  9. I used to drink all my buddies under the table pre-diagnosis days (all 100 lbs. of me back then). Now, 30 lbs. later and with a healed gut, I'll have two drinks and feel drunk as a skunk. I've had lots of problems with wine lately (perhaps the sulfites?) but I'm also EXTREMELY sensitive-I haven't found a juice yet that I can tolerate-but I did have Smirnoff...
  10. Hey guys-I'm kinda new at this (gluten-free for a year now)-I am getting ready to move to Denver to race for a mountain bike team out there and I need RELIABLY gluten free meals/snacks to take with me to races. So far I've been living off turkey sandwiches, but the thought of eating those all summer makes me lose my appetite. I seem to be sensitive to most...
