  2. Pre diagnosis, I'd always pick at the bun and just eat the meat. Same with pasta dishes, I'd just pick around the pasta and eat the stuff in it. Cereal would make my throat burn too.   3. I had a friend that worked at starbucks and made my lattes with soy milk-they use silk, which is gluten-free. I recently started buying raw organic coffee beans and roasting my own-seriously the best coffee i've ever had, and its way cheaper. And i make my own soymilk so i can have lattes. Yum!     So I misjudged a jump on my bike today and broke my collarbone. It turned out to be a fracture, something the doc called a "green line" or something, meaning my bone bent on impact and only fractured part way through. If an m.d. diagnosed you, go to him/her, explain the situation, and have them write a letter to your employer stating the seriousness of the situation.   9. My blood pressure goes up when I get glutened. Normally I'm around 90 over 60 but if I get sick then it can go up to 120 over 100. Nadia
  10. I used to run around 30-40 miles per week in college, about 2 years before being diagnosed with celiac disease. I can remember getting a "buzz" after eating gluten foods, kind of energetic, but more fuzzy and restless. Sugary foods that were low in gluten gave me tons of energy. I've never had a problem with a gluten reaction after eating apples (granny smith are my favorite, btw), but the peel is hard to digest for many people, especially for people with damaged intestines like us.   14. I know this has been a controversial issue among certain celiacs, but I personally can not tolerate any meats I've tried (which sucks, because I LOVE steak). However, I'm on the uber-sensitive side and react to pretty much everything. My boyfriend has gotten me grass fed beef before, and that may be safe, but I prefer to play it safe and eat fish and nuts...

  16. Quinoa is another good one. It's high in protein and lots of other nutrients too. Makes a quite tasty cold salad with some chopped up veggies and lemon juice and oil.

I'm not going to point fingers, but yes, there is at least one company that labels their products as gluten free on the front of the package, but has the CYA warning on the back about being produced in the same facility and that cross contamination may occur.   20. Beer and Cookie dough ice cream for an endoscopy-a little too much of both. Sometimes when I 'm really bored in class and in the mood to torture myself, I'll make a list of all my favorite foods that I'll eat one of these days when we're cured.

  22. To reiterate and add my 2 cents to this argument, I can't really relate to people who don't have time to be gluten free. Granted, I don't have children, but I work full time, go to school, train for and race mountain bikes, sew, and maintain a fairly active social life. If and when I am ever glutened, everything stops. I might be able to crawl around at work...
