ARCHIVED Chicken
ruthla replied to dbmamaz's topic in Gluten-Free Foods, Products, Shopping & Medications
If you can't avoid handling gluteny stuff around the kitchen, try wearing rubber gloves while doing so. And maybe a face mask too, if you can't keep yourself from licking spoons! Seriously, if you found yourself unconsciously licking rice spoons, you may have unconsciously licked something with actual gluten in it as well. Try putting a paper... -
ARCHIVED Chicken
ruthla replied to dbmamaz's topic in Gluten-Free Foods, Products, Shopping & Medications
I only buy kosher meats, and I don't know if non-kosher brands are different, but I've never had a problem with any raw poultry products (avoiding the obvious problems like chicken nuggets.) I have, however, gotten sick from gluten contamination in the kitchen- breathing in flour, touching wet spaghetti that a child didn't clean up properly, etc. Touching... -
ARCHIVED Popcorn And Gluten?
ruthla replied to MrMark's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
My guess would be that you used to have a corn allergy, but thanks to gut healing from gluten-free you've outgrown the allergy, or at least it's become far more mild than it used to be. It's also possible that you used to have popcorn contaminated with other allergens, but now that you're gluten-free you're being more careful to only eat "pure" popcorn... -
Thanks! Now I still need to play around with these recipes as one of them is much bigger than I need and the other contains ingredients I don't have in the house (such as the dairy-free powdered milk- sounds highly processed, likely to contain soy, etc.)

Last week I tried to convert a pizza dough recipe into a challah recipe, but I didn't have very good results. It came out way too sticky and too dense. Does anybody have a recipe they like? I need to avoid legumes so I need bean flour free recipes!

I usually make a cheese sauce- melt butter in a pan, add flour (rice works well) and stir with a whisk til the flour cooks, then slowly add milk, then melt in cheese after the white sauce is made. Sometimes I add in some spices with the flour, other times I add in spices after the sauce is thickened. What I like about this method is that I can use natural...

ARCHIVED Gfcf Cake! Help!
ruthla replied to highrentsmile's topic in Gluten-Free Recipes & Cooking Tips
I usually buy canned beets and use a small amount of the liquid in the cake batter or icing. (I usually make yellow cakes and then color with icing instead.) I got the best color by buying fresh beets and juicing it myself, but it was a lot of work and mess to dig up my juicer just for that! -
ARCHIVED Gfcf Cake! Help!
ruthla replied to highrentsmile's topic in Gluten-Free Recipes & Cooking Tips
Earth Balance is also a good butter substitute, in baking or as a spread. We've been baking without artificial colors for years, even though I'm pretty new to gluten-free baking. I've never found a good all-natural substitute for bright red food coloring. I've found that beet juice works well if you want to make a light to medium pink, and grape juice... -
Where can I find this challah recipe? I had good sucess with a pizza dough recipe last week- the kids liked it better than the wheat dough I used to make! I made some breadsticks with the pizza dough and my daughter commented "I thought gluten free breads weren't supposed to taste good?" She couldn't taste any difference between the gluten-free breadsticks...

ARCHIVED Gluten Free Diary Free
ruthla replied to Worriedtodeath's topic in Parents, Friends and Loved Ones of Celiacs
Yes, Kosher Pareve cannot contain dairy, meat, or poultry, but it can contain eggs or fish (although items with fish in them are usually labeled kosher fish.) Many times kosher items will simply say kosher, or have the particular kosher symbol, if it's pareve, and will say "dairy" or "D" if it contains dairy, or "fish" or "meat" next to the symbol if it contains... -
ARCHIVED Mentions Of Gluten-free In Kids' Shows
ruthla replied to dandelionmom's topic in Parents, Friends and Loved Ones of Celiacs
Hey! Inquiring minds still want to know! -
One of my most obvious symptoms of what I think is gluten exposure is when I get "toxic poop"- my stools are liquidy and burn my skin when I pass them. This morning I had normal, fairly firm stools- but then later this afternoon I had the toxic poop again. Very liquidy, it really hurt where it touched my skin on the way out- but no other symptoms since...

ARCHIVED Mentions Of Gluten-free In Kids' Shows
ruthla replied to dandelionmom's topic in Parents, Friends and Loved Ones of Celiacs
OK, Disney Channel is about the only channel that's ever turned on in my house these days! Now I have to ask which episodes of Hannah Montana and That's So Ravin mentioned gluten-free. I've probably seen all of them - or at least listened to them while playing online. -
ARCHIVED gluten-free Trial For My 11yo Was A Bust
ruthla posted a topic in Parents, Friends and Loved Ones of Celiacs
I decided to give my 11yo a shot at a gluten-free diet to see if it would help her with behavioral issues. She's been on Feingold for years but it's never helped 100%, so I thought maybe this would help. I know that my own FMS gets worse when I have gluten, but I haven't had any lab tests done on myself at this point. Considering that I react to contact with... -
I mentioned this problem in my other post, but I think it's important enough for a post all by itself. My mother just brought me a whole cheesecake from a local kosher bakery because I wouldn't let my son have a slice of cheesecake they brought home from a non-kosher diner. She meant well, but I JUST decided to get all the gluten out of my kitchen and...

ARCHIVED Contamination From Smelling Gluten Cooking?
ruthla replied to ruthla's topic in Coping with Celiac Disease
Yeah, I think I'll just give the whole canister to my mom- I'm not sure how much baking she does anyway, but I think the canister is really hers anyway. Grrr. Yesterday my Mom brought home a piece of cheesecake for my son, and I told him to bring it right back to them- it's not from a kosher restaurant, and I'm sure it has gluten in it. I simply don... -
ARCHIVED Should I Give My Baby Gluten?
ruthla replied to aorona's topic in Parents, Friends and Loved Ones of Celiacs
Why on earth would you go out of your way to feed the baby gluten when you don't even keep it in the house anymore? If nothing else, why risk cross-contamination for the rest of you (or direct contamination if the baby nurses with traces of gluten in his mouth)? It seems to me that there's a high chance that your baby won't tolerate gluten well- so why... -
ARCHIVED Contamination From Smelling Gluten Cooking?
ruthla replied to ruthla's topic in Coping with Celiac Disease
I went through my pantry today and threw out a bunch of gluten containing stuff: opened packages of wheat germ and matzah meal, cornmeal that may have been contaminated before I went gluten-free, etc. There will be no more cooking gluten-containing foods in my kitchen, and I'm going to insist that any gluten-containing foods (precooked) be eaten on paper... -
ARCHIVED Contamination From Smelling Gluten Cooking?
ruthla posted a topic in Coping with Celiac Disease
I was napping earlier, and my 13yo decided to make pancakes. Unfortunately, she used wheat flour instead of rice flour to make the batter. I've since shown her where I keep the rice flour so this shouldn't happen again. My 11yo was acting up pretty badly afterwards- yelling "leave me alone!!!" repeatedly when her big sister asked her to clear her stuff... -
ARCHIVED Trader Joe's Products
ruthla replied to ruthla's topic in Gluten-Free Foods, Products, Shopping & Medications
Which foods are high in oxalates? I don't normally have white potatoes at all- but right now it's been harder for me to stick with a healthier, lower carb diet when I have lots of gluten-free goodies on hand for my daughter. I suppose I could cut out the peppers and tomatoes- they're the only nightshade veggies I eat regularly. -
ARCHIVED How Do I Get Started?
ruthla replied to ruthla's topic in Parents, Friends and Loved Ones of Celiacs
I took her to the store with me and let her pick out what she wanted. Pirate's booty is OK, right? A lot of the specific product suggestions won't work because we keep kosher plus she has other food sensitivities- namely to synthetic colors and flavors. Most of the frozen ready-made meals aren't kosher, and fruit roll ups are out because of the coloring... -
ARCHIVED How Do I Get Started?
ruthla replied to ruthla's topic in Parents, Friends and Loved Ones of Celiacs
OK, I'm back from the store, though I may go shopping again next week. I just couldn't bring myself to spend $3+ on a mix that makes one cake or brownie- so I got 2 pacakges of rice flour- I already have sugar, xanthan gum, and potato starch in the house. I did get lots of rice cakes and potato chips and assorted gluten-free snack foods along with some... -
ARCHIVED Hoping Her Son Grows Out Of It
ruthla replied to Worriedwife's topic in Parents, Friends and Loved Ones of Celiacs
I wonder if some people are confusing Celiac with wheat allergies. Allergies can be outgrown- but my age 4.5 the chances of that happening are much slimmer than they are in infants and toddlers. -
I decided to try my DD on gluten-free to see if it helps some of her issues with fatigue and irritability. I've been gluten-free for nearly 2 months, but I've basically been on a Paleo diet, so I'm not REALLY familiar with all the gluten-free foods available. I don't want to restrict her diet unneccesarily- just going gluten-free for a week is a big enough...

ARCHIVED I Think My Children Are Trying To Poison Me!
ruthla replied to ruthla's topic in Coping with Celiac Disease
I actually HAVE discussed smoking and taking drugs with her- explaining to her the real risks, the social settings she might face to use them in the future, the legal ramifications, etc. I can limit her opportunities for smoking or drug use, but the simple reality is that I can't actually prevent her from using if she's at a party without me and is offered...
