  2. I've been using xanthan gum in my gluten-free baking, but I've recently cut all obvious corn out of my diet and I've been feeling healthier as a result. I just found out that xanthan gum is corn-derived. Is there an alternative that's 100% corn-free?

  7. Does anybody know where I could find gluten-free oat matzah? I can't imagine not having something to use at the seder, but I also don't want to eat something that might sicken me. I'm an Orthodox Ashkenazi Jew, so it needs to be 100% kosher for Passover, and I don't eat rice or corn during Passover.

  17. I usually use the pure stevia, without any fillers. It's more concentrated and a lot less is needed for sweetness. I should pick up a box of the "stevia plus" in little packets to take with me, but for the time being I just have the little shaker bottle at home.

However, if you're going to drive all the way out to Plainview (it sounds like you're in Suffolk County?) you may just want to head to Fairway- they have an awesome collection of gluten-free products!   20. The other day, I tried using my pizza crust recipe to make hamburger buns and it was a complete flop. They were just too thick and didn't cook properly on the inside. I cut them in half and baked them some mroe just to get the insides fully cooked, and now theyr'e more like English muffins (but really dense chewy ones!) than buns. So, I need a new bun...
  21. I just want to play Devil's Advocate here for a minute: Are you 100% certain that gluten is her problem to begin with? Could she be reacting to synthetic additives or something else that was removed in the gluten-free trial, rather than the gluten itself?   24. I agree with you about the germs from the floor boosting the immune system- but not the gluten crumbs on the floor! My kids don't see rice cakes as "hippy food"- they've grown up eating them. While my 13yo will prepare her own food, she can only prepare what I've purchased. And she's old enough to understand why the kitchen needs to be mostly gluten...
