  1. I am recently diagnosed as well but have been eating gluten free for a few years (or so I thought). I am travelling to Panama in a week but luckily I will be staying at friends (they are doing research at the Smithsonian research station and have a house with an extra bed) so I can cook there). I will be bringing some of my gluten free items along with me...
  2. Good idea. I have a box of gloves in the cupboard. I'll have to see if my hubby has a dust mask in his workshop. I have a nursing friend, I think I'll ask her if she can bring a few home for me. I know the hospital will have them because I used to have to wear them when I worked with certain bacteria and when I went into an AIDS patients room (I am a lab...
  3. I have been really really careful with my diet. I've given away my gluten flours. Eating very very simply right now, fruit, vegies and a protein. I still have headaches and muscle ache but my stomach is settled down and no longer bloated. I'm taking that as a positve sign that I am on the right track to feeling better. I have to do all this slowly as I still...
  4. I'd love a new recipe. I usually do homemade but there are days that a shortcut is the way to go.
  5. One of these days I plan on ordering her book. I like having a book that has already had the adpaptions done for me. She seems to like from scratch food, which is how I cook and eat.
  6. 5. Has anyone travelled in Hong Kong or Italy on a gluten-free diet and coped? I haven't been to Hong Kong or Italy but I was in Malta (just below Italy) in September. We rented an apartment, so I was able to make my own breakfast (lots of fresh fruit, amazingly good yogurt and gluten free bread found in a little grocery store). I stuck to ordering fresh...
  7. Copy and pasted. Thanks. I have a number of gluten free recipes that my kids request (I'm the only celiac in the house). They especially like my homemade Tapioca Bread recipe.
  8. Those look great. It's nice to find recipes that I can eat and that have real recognizable ingredients. I made deep fried spring rolls once (double layer of rice paper makes then nice and crispy) and they were pretty popular here. Now I need to find where I've put the recipe (found it on a Thai blog site). If I find it I think I'll post it. It was really...
  9. I've had great success with recipes from Open Original Shared Link
  10. If you buy your nuts and seeds raw (store in the freezer) and toast them up fresh, you will have a snack that will beat anything you can buy and is much better tasting than buying toasted and throwing together.
  11. These had been my favourite cookies for years. I wanted to be able to eat them again, so I played around with the recipe and this is what I have come up with. COFFEE CRISP 1
  12. Another very good potato dish. Can be made ahead. GOAT CHEESE MASHED POTATOES GRATIN 4 lbs (2 kg) large russet potatoes, cut in eighths 12 garlic cloves, peeled 2/3 cup (150 ml) whipping cream 1 cup butter 1 (113g) package soft goat cheese (about
  13. This recipe is dead easy and very yummy. Gratin dauphinoise Preparation time: less than 30 minutes Cooking time: 1 to 2 hours INGREDIENTS 1 garlic clove, crushed butter 450g/1 lb waxy potatoes, thinly sliced 300ml/
  14. I've never heard of them. I'm not sure I've seen them up here (Vancouver, BC) but then I never looked for them either. Thanks for the heads up.
  15. Great articulate post. You made more than one person feel better today (me). I, too, can't wait until I can have dairy again. I'm finding that way harder than staying off gluten.
  16. I am the one who makes the kids lunches (generally sandwiches). I'm probably contaminating myself regularly. At 12, it may be time to put them in charge of that part of the lunch making. I did all sorts of baking at Christmas with gluten flour (and some gluten free baking), time to rethink baking for the family. It can't hurt them to have their treats...
  17. I don't like to cook using wooden spoons. I have heat resistant plastic that goes in the dishwasher. Do you think I need to buy separate ones (I cook mostly gluten free but occasionally I make them a gluten treat)? I have a metal colander and I do know that it is really hard to clean all the starch off of it so I will be replacing it. I have been toasting...
  18. Let me start by giving you some background. I have had stomach issues always and was given the diagnosis of IBS at 18 ( I am 49 still lol). I had triplets a bit over 12 years ago and was diagnosed with fibromyalgia when they were 5. After a year of the fibromyalgia diagnosis I did an elimination diet and discovered that I have problems when ever I ate wheat...
