ARCHIVED Do I Need To Replace My Pizza Stone?Wonka replied to wildkat's topic in Coping with Celiac Disease If you have an oven with a cleaning cycle just leave the stone in during the cleaning. It comes out looking like new.

Perhaps you need a larger bread pan. I have two sizes. I have to use my larger bread pan for my gluten-free bread.

Families can be so demanding lol, Imagine, expecting clean clothes, food on the table, being driven to events... All this when bread needs to be made and experimented with.

ARCHIVED FibromyalgiaWonka replied to floridagrl's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease I sure hope that more of my fibro and arthitis symptoms go away now that I know I have celiac and continue eating totally gluten free (I wasn't as careful when I thought that I just had an intolerance). Wouldn't that be nice?

ARCHIVED Constipation...Wonka replied to jewi0008's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms Thanks for the info. Sorry I didn't respond sooner. I have just returned from a trip to Panama. I have all the things covered that you have listed (fat, bulk and water) but I suspect that the problem for me is the peristalsis. For the first time I did not have a problem while travelling. I increased my magnesium for a day and that was enough to help me push...

ARCHIVED FibromyalgiaWonka replied to floridagrl's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease I have celiac and fibromyalgia. When I realized that I had a problem with gluten (long before the doctor realized it) I went gluten free. My pain and fatigue reduced by 50%. I still have fibromyalgia but it has lessened significantly and is much easier to deal with.

ARCHIVED I Need Help From The Cooking MavensWonka replied to Wonka's topic in Gluten-Free Recipes & Cooking Tips Copy and pasted into my recipe file. Thanks.

ARCHIVED I Need Help From The Cooking MavensWonka replied to Wonka's topic in Gluten-Free Recipes & Cooking Tips I was surprised but soy sauce was listed and in brackets next to it was wheat. I've never seen another brand around here but I'll make a trip soon to the T&T Asian Supermarket and see what else they have.

ARCHIVED I Need Help From The Cooking MavensWonka posted a topic in Gluten-Free Recipes & Cooking Tips I was making teriyaki sauce for my family yesterday. I use Tamari wheat free soy sauce. I was reading the label of my mirin and discovered that it has wheat in it. What would you use as a substitute? Should I add cornsyrup to Sake to sweeten it up?

The long overnight (or in the case of Ciabata 48 hours) is for flavour development. For her gluten free breads she doesn't really need very much yeast because there is only the one short raise then in the oven. If you were to punch down, regular bread that is, more than the two times the yeast can actually get used up (they run out of a sugar source to feed...

ARCHIVED Can't Eat Fat At All, Symptoms Seem Worse Than EverWonka replied to lightening16's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms We are in the same boat. I'm going through this again because I went on a two week gluten challenge as well. My sensitivity has gone way up (I'm not surprised by that) and I'm back to simple.

ARCHIVED Can't Eat Fat At All, Symptoms Seem Worse Than EverWonka replied to lightening16's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms I eat mostly chicken and fish. I have an egg for breakfast with some fruit or my version of a fruit smoothie (just frozen fruit, fruit syrup {I make my own in the summer} and water - it's a nice refreshing change). I try and make enough food at dinner so that I have leftovers for lunch. I had a nice lunch the other day (I had no leftovers), I roasted a portabello...

I leave tomorrow for Panama to visit a dear friend. She was diagnosed bipolar 14 years ago and then diagnosed with Lupus 3 years ago (she had to force doctors to test her for lupus as her sister has it and she recognised the symptoms). She has been talking about going gluten free for years now, so maybe this will impel her to give it a try. She has been eating...

ARCHIVED Does Anyone Else Have These Symptoms?Wonka posted a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms I have had every digit on my hands spontaneously burst a blood vessel. It feels like a bee sting, then my finger swells up and turns a lovely shade of blue. I just thought it was my non functional body (I think I was put together with faulty parts lol) just doing it's regular unexplainable weirdness. But yesterday at a Eat Icecream For Breakfast party (whoa...

ARCHIVED Constipation...Wonka replied to jewi0008's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms A small bag of dried cherries (farmers market purchase - I talked to the farmer to ensure that they were safe) worked brilliantly for me the other day. lol I also take about 600mg of magnesium/day.

ARCHIVED Can't Eat Fat At All, Symptoms Seem Worse Than EverWonka replied to lightening16's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms I agree with you. I am newly (again) off of wheat and I can't tolerate dairy or soy or anything processed including all the alternative flours (I'm guessing that that will improve once my gut heals it's just really sensitive right now) and the psyllium fiber that I have been taking for over a year has been irritating my gut (I also think this is temporary...

ARCHIVED Developing Diabetes After CeliacsWonka replied to gfgypsyqueen's topic in Related Issues & Disorders I don't have diabetes but used to have severe highs and lows (when I had a low I would start to shake really bad, became bad tempered and my brain would get all fuzzy). When I was pregnant with my triplets I developed gestational diabetes which went away once the babies were born (they are 12 now). Once I was diagnosed with fibromyalgia (I also have IgA Deficiency...

ARCHIVED Galettes De Riz/ Rice Wraps AdviceWonka replied to Lisa16's topic in Gluten-Free Recipes & Cooking Tips She described exactly how I made my spring rolls yesterday. I didn't run under water but dipped two briefly in warm water, rolled and let dry a bit then put on a tray with a wrung out wet teatowel over them. I made about 50, cooked up 10 for my family of 5 and froze the rest. Next time we want them should be pretty easy.

ARCHIVED Pamela's Bread Mix -- Your Favorite Uses?Wonka replied to HudsonValleyGal's topic in Gluten-Free Recipes & Cooking Tips I've used Pamela's bread mix or Bob Redmill bread mix to make pizza (I don't follow a recipe). I place my pizza stone in the oven and preheat to 450 F. I add some to a bowl, add enough water to make it into a ball and roll it out using more mix if it gets too sticky. I put corn meal on a pizza peel and put the crust on then add my toppings ( my favourite...

ARCHIVED Advice From Celiacs With ConstipationWonka replied to Wonka's topic in Coping with Celiac Disease It sure would be nice if mine corrected eventually. I am a bit reticent to eat high fat as that is a real trigger for my GERD.

I do not get diarrhea (or not very often) but I suffer from chronic constipation (it can be really awful when I travel by air). I do not have hard dry stools. I have normal to soft stools that I can't eliminate (my bowel seems to be sluggish and I don't get enough peristalsis to effectively eliminate). Does this describe the constipation caused by celiac...

ARCHIVED Should I Deny The Rest Of The Family Wheat?Wonka replied to moon-gypsy's topic in Coping with Celiac Disease This is a recipe that I like and my gluten loving children love it too. TAPIOCA BREAD 1 3/4 cups warm water 2/3 cup instant milk powder 3 large eggs, beaten 1/4 cup melted butter 1 tsp vinegar 1/4 cup sugar 1 1/2 tsp salt 2 1/4 cups brown rice flour 1 1/2 cups tapioca flour (sometimes sold as tapioca starch) 1 Tbsp Xanthan gum (this is important...

ARCHIVED How Do You Organize Your Kitchen?Wonka replied to Wonka's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease Thanks. I sure hope that the muscle pain and fatigue do improve. I would be happy to find out that fibromyalgia is a misdiagnosis. When I originally discovered that wheat was a problem I changed my diet and my fatigue and pain reduced by half but I wasn't as diligent about the diet or making my home safe (because I didn't know any better) so I was contaminating...

ARCHIVED How Do You Organize Your Kitchen?Wonka replied to Wonka's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease I have given away all my gluten flour. I dumped out my cutlery drawer and threw everything in the dishwasher and scrubbed the drawer out and moved the toaster which was on the counter above the cutlery drawer (I placed the families toaster on a wooden tray on the counter that has been designated for them. I still need to tackle the cupboards but I need to...
