  1. I've been reading it for a few days (found it on sunday). It's so nice to read her take on food. So much like my own. I love food. I do not eat to live but live to eat and eat well. Because of my love of good food I had to learn to cook it myself (I couldn't afford to eat out that way all the time lol). I worked with some fabulous cooks and took many cooking...
  2. I take a multivitamin, Vit D and magnesium. I have not found a calcium supplement that my gut can tolerate (and it's expensive trying all that is available). I have recently been able to add dairy back and I eat alot of vegies and fruit, brown rice, quinoa, protein etc.. My gut has been feeling terrific. I also have fibromyalgia and that has been acting up...
  3. As far as the soy, rice and almond milk..and I don't mean to keep bringing up the carrageenan thing..but one part of me is doing much better since I cut out everything that had that in them I just checked the soymilk and almond milk in the fridge (read back porch) and they both have carrageenan in them. I bet that is the culprit that I'm reacting to.
  4. Make sure that you talk to your doctor and let him know that you have them. Adults get very sick with this. DO NOT GO TO YOUR DOCTORS OFFICE OR TO A HOSPITAL EMERGENCY WITH THIS. It is far too contagious and could a real issue for someone who is immunocompromised or pregnant or very young or old. My husband came down with chickenpox when our oldest came...
  5. After watching Supersize Me with my kids (they refuse to eat in any fast food places now Yeah!) and seeing his experiment with McD's fries (he kept them for a long time to see how long they took to go bad). After a month they still looked the same as the day they were bought. Real food does not do that, it goes bad. For that reason alone I would never eat...
  6. I am definitely more sensitive now. I went wheat free years ago when I was diagnosed with fibromyalgia. My pain and fatigue reduced by half. I wasn't completely gluten free, because I didn't know any better. I then started to have stomach issues and a Lupus/Celiac friend suggested that I may be celiac. I went back on wheat and was very sick, bloating, gas...
  7. For the first few months I have stuck to a simple protein, fruit and vegies. No grains, no dairy, no soy (I reacted to it) just naturally gluten free food. I feel wonderful. I am slowing introducing other food. I can not tolerate dairy in small amounts and I can now tolerate the gluten free flours so I can have gluten-free bread and goodies (these infrequently...
  8. I get auras without the headache and headache without the aura. I'm less freaked out when they happen because now I know that both are migraine symptoms. I get migraines on day 2 of my period (so this may be related to my hormones and not celiac) and when I travel or get glutened. I take a med called Zomig when I get the migraine and it is brilliant at helping...
  9. I do the same. I am having a pot luck on friday for my mom friends (this is an regular Feb thing). I am making a Greek Briami and a gluten free chocolate cake so that I have a safe main dish and a dessert I can partake in.
  10. Well said. I have just returned from a trip to Panama and had no trouble eating gluten free. The hardest part is the airline travel. Unless you are going overseas, or are in 1st class, they don't serve you food (therefore you can not tell them ahead of time that you are celiac) and all there is to buy is usually gluten type foods. Because I'm from Canada...
  11. You are very welcome. I'm going to check out a restaurant on Robson Street called Zin Restaurant and Lounge. I was just reading a free magazine called EAT and on the very last page was an area for chefs to tell about themselves. The chef for this restaurant has a wife who is celiac so most of his menu is gluten free (at the very least this man will know...
  12. You should try Indian. Besides Samosas and the bread (and pakoras because they are cooked in the same oil as the somosas) most Indian food is safe. There are lots of vegetarian options and the fact that you eat fish and chicken occasionally opens up lots of choices for you. I guess that I'm lucky. I have always loved to cook and I've had no difficulty...
  13. Interesting. My anxiety has gone down although it hasn't completely gone away yet. I've spent most of my life fighting anxiety. I didn't do alot of sports growing up because of anxiety (and I come from a very sporty family - dad was a weightlifting coach with his own club, brother was in the 88 Olympics for weightlifting and my sister is extremely fit and...
  14. My cast iron pans have never been used with gluten foods. What I have done in the past to clean my cast iron pans was to oil the pan and add alot of salt and scrub. Then season them after that. It cleaned them up pretty well. I have a ceramic stone and I think they are pretty absorent. Use parchment under your pizza and put it on the stone, then you know...
  15. I have had to tell my doctor, sternly, to sit back down that I was not finished yet (I''ve had to do the same with my mother so I was well practiced at it - lol). He has learned that I do my research and that neither one of us should dismiss the other. We have now developed a mutual respect for each other (I'm the one who figured out that I was celiac).
  16. Which school are you going to. I live down the hill from UBC. I have discovered that the little hole in the wall Malaysian restaurant called Cafe D'Lite is pretty safe. I order the Laksas with rice noodle only (otherwise they do a mix of rice and wheat) it does not contain any soysauce (they only put soy sauce on their Hainese chicken). It's spicy but very...
  17. I've done yoga most of my life (I used to do the yoga, that was on TV, with my grandmother) but with my fibromyalgia I have chronic sciatica. I have it under control, with the help of my chiropractor, but any exercise that involves dural stretching activates the sciatica (I had no relief from sciatica for 3 years until I found this chiro) and every yoga class...
  18. I read, cook(I love cooking), garden (I have a big garden and I can get lost for hours in it), read, sudoku, go for long walks at the beach (I live close to one), ride my bike and like a few others have stated, sex is the best for destressing (now if only I could get my hubby home from work, the workoholic). lol
  19. Funny, until now, I never connected my anxiety to the celiac but it makes sense. I never used to be an anxious person but now I find I have to push past it when I know it isn't based on anything (as in the activity I'm attempting to do). It would be nice to see those feelings completely go away. I'm generally a calm person (on the outside) but boy would people...
  20. Thankyou very much. I hope you enjoy your new purchase (I love new cookbooks).
  21. It was your recipe for Farmhouse White Loaf Bread that I was interested in but I'd happily accept a ravioli recipe as well. I love to cook and love to receive already tried and loved recipes. I do find this forum a bit harder to follow regarding who posts are directed at than the food forum I also hand out in (fine cooking). Each post is numbered and the...
  22. My husband had a nodule biopsied a few years ago. He said it was totally painless, not a big deal at all.
  23. If you are interested and want to p.m. me, I would be happy to get the recipe to you. Not MNBeth but I'd love the recipe.
