Oh, yum! I love these ideas! I am going to have to try that, and I like the idea of pureeing the vegetables as well. We like mexican lasagna...cut up corn tortillas, and layer in a lasagna pan with refried beans, corn, olives, black beans, onion, covered with homemade enchelada sauce (big can tomatoes plus can green chilis plus salt, puree in the blender...

My son (11 yr old) has GERD...acid reflux disease. He gets much worse if he gets glutened, but unmedicated it's still pretty bad even w/out the gluten. Mostly not...we're pretty busy so if something is going to take a long time I'll schedule it on a day when we've got time. I think that you get used to things and they don't take as long any more...for example I used to feel like it would take a long time to grill things, so we didn't do it much. Now we've got a gas grill and have gotten the process down... -

OK, hopefully the pictures worked! Here's the recipe: Well, it's not such a stretch to make these gluten free, I can't think of any reason why stuffed mushrooms need to have gluten in them (although I *have* eaten at restaurants where they did...breadcrumbs I guess...so maybe it is unusual). Dairy free is a little more challenging but can be done...

I love polenta too! I've used it in several recipes, and once I made some polenta crackers. Yum! I was thinking about pesto pizza, too. Mmmmmm! LOL...I actually DO have a photo of pepperoni pizza! I made this last night for guests! It was sooooo good. I tossed gluten-free pasta with the pesto, then put grilled chicken strips, grilled asparagus spears, and fresh grape tomatoes on top. Yummy! We're eating leftovers for lunch today. Thanks for the recipe! -

Yea! Good to hear first hand how that cauliflower is. I can't wait to try it! The package of noodles I bought (De Boles brand) says they are oven ready and you can just layer and cook. Oh, yum! That sounds wonderful. I would think you could make ice cream with Almond milk just substituting the regular milk for almond, you can make it with other milks w/out a problem. I'd add something creamy to it, though, because it will turn out like ice *milk*, thinner and more icy and less creamy if that makes sense. We made some with rice milk...
