yep, I bet it will work for cupcakes too! I'd bake them for less time, maybe start with 15 minutes and test them every few minutes after that. Good luck! -

Thank you for saying that, Puddy! I was honestly wondering if they were helpful, so it makes me feel good ) I remember those first few months, I think I ate pretty much cooked chicken breast and carrot sticks and nothing else. Even if a menu just gives you some ideas, it can help get your brain going as to what to eat. I promise...it WILL get easier... -

Forgot to add...I will often make things and take out part of it before serving it for the people in my family who are allergic...for example, I'll toss the salad first, take out my son's portion and my hubby's, and then add the blue cheese and tomatoes. Then hubby can add cheese to his and son can add tomatoes to his, and neither of them have to pick something... -

Thanks! Most of my dinners are dairy free, but some of them are not. You can just use a dairy free cheese substitute for the parmisan and feta in the two recipes that do have dairy...we use sheep cheese (mizethra) instead of parmisan and goat feta, which my son and I can handle better than cow's milk. The Oreo cake is sort of expensive to do dairy... -

I have included suggestions for how to do it without dairy, soy and eggs. It's naturally dairy and soy free, though. I was thinking about looking for something like that. It honestly doesn't bother me too much to not eat, there are times when the colitis is bad when I just fast until I feel better. Usually if I stay away from dairy and of course from gluten I feel OK, but I have wondered if just giving my system a complete break might be a good idea. Thanks for the name...

We now have 2 locations in Salt Lake City with gluten free take out/eat in PIZZA! You have to order the gluten-free crust, but all the other ingredients are gluten free. It is sooooooo good! if you have one in your area, bug them about getting in gluten-free crusts. Apparently (not surprising!) they are selling like crazy. So wonderful NOT to have to...

The prognosis is not that great, it's not going to kill me but I will probably be dealing with it the rest of my life. You can take stronger meds than I'm on...steroids and immune suppresent drugs...but I would rather deal with diarrhea than with the side effects of those! I used to post frequently but my computer crashed, so I had to start over with a new 'name'. I used to be Anerissara. Anyway, I have been seeing a good GI doc and biopsies show that i have Lymphocytic (sp?) Colitis. She says this frequently goes along with people who have Celiac's. Anyone else have it? Anyone have any sort of success in getting rid of it...

Enjoy Life is a brand that does allergy free foods. They are free of all of the ones you listed, except I don't knwo about honey. Not too expensive...boy, that's a tough one. As you get used to things, you tend to find regular grocery items that are OK. allergygrocer.com has tons of products and you can search according to which foods you need to avoid... -
