  1. Well, the cake went really fast! So we decided to replace it with some cookies. These turned out great, I think they're the best cookies I've made since going gluten-free! Also, I posted it on my Blog again (I think I'm going to start posting recipes there frequently) with some pictures of the cookies. Open Original Shared Link These are gluten...
  2. OK, Pillsbury frostings are mostly gluten free (I remember this from awhile ago). It's not rainbow chip exactly, but check this out: Open Original Shared Link From the ingredients, it looks gluten-free. Give them a call first, though. MMMMmmmmmm, if it's gluten-free you could save yourself a step! I love the taste of fresh cream cheese frosting, but...
  3. rainbow chip frosting....yum! Some of the commercial frostings are actually gluten free...have you checked to see if there's a gluten-free rainbow chip frosting? There may be...in which case you've got it made! Otherwise, I guess you could find some gluten-free candy or chip and toss it in the frosting recipe, that would be good too. I think I saw rainbow...
  4. Hey, sweetfudge! I live in Salt Lake City...why don't you pop on over for a slice?!? That's cool, in the grand scheme of things we're neighbors ) Darn it, though...the cake in the picture, sadly, is gone. They don't last long. It tastes pretty much like a box cake, if you added more of the strawberry mix it would probably taste even more like it...
  5. Hi! I've taken a break from the boards here (my son was dx'd with GERD as well as celiac's, so I am now having to divide my time between forums for 2 different ailments...wah!) but I wanted to share this recipe. I've posted it before quite awhile ago, but now I have a photo of it so I wanted to share it again! GLUTEN FREE STRAWBERRY CAKE: 1 1/2...
  6. Well, I have an 11 yr old boy who has eczema and reflux, and he has done much better gluten free. We don't have an official dx, but he does get stomach aches and his reflux gets worse when he's had gluten. The eczema has dramatically decreased since going gluten-free. I'd give it a try... it can't hurt, and generally a gluten free diet is healthier anyway...
  7. I use the recipe below as a base for most of my cakes. It is really good, turns out consistently, and most people don't suspect it's gluten free! I just add about 1/3 cup of cocoa to it for a chocolate cake. My son's favorite birthday cake is a black forest cake. You do the recipe below with the cocoa, and bake it in 2 round pans. Then I make chocolate...
  8. I posted these in a thread below...normally my kids eat very healthy food (I make pretty much everything) but I included a lot of "fun" items in my lunch box ideas because I know how kids can be at school. Some of the gluten free baked items are hard to find or expensive, so they might not be options very often. I forgot to add to the list that my kids...
  9. Thank you for the advice! Right now thing seem to be going a little better. We are doing the prevacid early in the morning and waiting for 1/2 hour or more before eating. He has had 3 days in a row where he's not had many tummy issues! He still does have evening tummy aches but they are milder each day. I am just praying that it continues to improve...
  10. What state do you live in? I hs my 3 kids, and our state has an online homeschool program that's FREE. It's really, really comprehensive, and they send you everything from microscopes to phonics tiles in addition to all the other stuff. It's technically a public school, which is why it's free...but you can also purchase it if your state doesn't offer the...
  11. I'm sorry your son is having to deal with that! That would break my heart, too. The first 6 months or so are really hard, because you are still trying to figure out how to eat. My first few months I ate carrots, chicken, and little else...I thought for sure my son and I would never eat a donut or cookie again! It's been 3 years, and at my son's 11th...
  12. Isaiah's tummy issues started after a bout with the flu, too. He had a really nasty stomach virus that caused a lot of vomiting, and after that his tummy has been acting up. At first it was just once or twice a month, then once a week, and in the last 6 weeks it's been more like once or twice a day ( On the Prevacid, he's had some days with no tummy aches...
  13. Sorry to hear that! From what my son says, it's just no fun. How long has it been going on?
  14. Oh! I'm sorry you're daughter is having troubles, but it's good to see we're not alone. I have suspicions about dairy with my son, too...I think I may take him off dairy again and see what happens. I hate reflux! It's so hard to see your kids suffer, and it seems to crop up with no warning despite all efforts to control it. Sigh. What dose of Prevacid...
  15. I agree, I think there's other allergies/intolerances going on. I have been thinking about trying NAET, which my aunt has been doing. She had tons of food issues, and she is much better already. Have you heard of that? Any advice?
  16. Argh, I am having such a tough time right now! My poor 11 yr old son is not doing well. He's been gluten-free for about 3 years and had been doing fine, but for about 1/2 year he's had tummy aches off and on. In the last 6 weeks or so, he has started having stomach aches every day. He gets them after he eats and at night. We saw a dr. who thought it...
