  1. It was really pretty pliable! I was surprised. I think it's because you chill it...you *have* to chill it, or it won't roll at all. It is a little more fragile than regular pie crust...but still quite workable. I just gave up on pie crust years ago and have been making the dough and just pressing it into the pan rather than rolling it out. It worked...
  2. I've used almond milk with success...if you can have nuts. My son likes it better than soy or rice and I think it's better nutritionally.
  3. Jersey...yep! It would be fine with the brown rice flour, especially since it's superfine. Where do you find the superfine flour? I just used regular rice flour, I did it once with white and once with brown and they both turned out fine.

  5. Whoa! That bacon-encrusted turkey sounds *amazing*! We always brine ours....turns out great, but I am loving the bacon idea....maybe we'll try it this year!
  6. I just posted this on my blog...there are photos of it there if you want to see. It's one of those tarts that you don't bake in a pan...you just fold the pastry over it and bake it on parchment paper on a cookie sheet. I was soooo happy with the crust! I'll post the crust recipe by itself too...I'll be using it for everything pie-related from now on! ...

Hormel Chili (WITH beans) and Mission tortilla chips with cheese on top corn tortillas (Mission) with cheese, green onion, Daisy sour cream and Pace Salsa Rice cakes with peanut butter and jelly corn tortilla with refried beans (check to see if they're gluten-free...many are) and grated cheese...
  8. Yea! I'm so glad it turned out for you. I love that cake! And yes, I've done the frosting with different flavors. It's my favorite...it's great with vanilla on carrot cake, or you can put lemon in it, or strawberry syrup. The chocolate cream-cheese is my favorite, though. I sometimes make the vanilla kind and eat it with apple slices...yum!

I *think* she was poisoned with green tomatoes/tomato vines...the only account I could find of that sort of poisoning pretty much described exactly what she was going through. I am hoping that was it...
  11. Sorry to be MIA lately...I have had a tough couple of weeks. Right now, my little kitty (7 mos old) is very sick and we are trying to keep her going. I'm not sure how it's going to turn out...she won't eat or drink and has already racked up quite a bit in vet bills. We could use some prayers...I am really exhausted and sort of feeling thrown back to last...

  13. Ugh, it would stink to be intolerant to tapioca! But corn and potato starch would act exactly like the tapioca, so for sure you could just use those. I used a lot of corn starch earlier on, before I found the tapioca. I'm so glad that these are working out for everyone! I baked a second batch after I posted and they spread out a little and weren't puffy...
  14. Whooo Hooo! I am so glad they turned out good for you! I was pretty amazed that they tasted that "normal"...I think it must be the pumpkin. I don't think I'll make chocolate chip cookies without it again. What did you do to make them egg free? I make them dairy free (I use soy butter instead of regular) although I left the dairy butter in the recipe...
  15. Monday: My mom is in town, we'll be picking her up at the airport at noon.   17. Ok, so every time I go in the grocery store my mouth waters because the bakery has had these yummy looking, big puffy pumpkin chocolate chip cookies on display. So I tried some gluten free ones...OH BOY! They are just like the 'real' thing, I think maybe the pumpkin just adds the right amount of moisture or something but they're one of the best gluten-free...
  18. Monday: Baked bbq chicken (Kraft sauce), twice baked potatoes, green salad. Tuesday: Chicken Spaghetti Sauce with gluten free noodles, gluten free garlic toast, green salad (I cook the sauce on low all day...a large can of tomato puree, 2 chicken breasts, some olive oil, garlic, sea salt, oregano and basil. Before serving, I shred the chicken and stir...

  20. Monday: Super Taco Salad. One pound ground beef, browned with one chopped onion. Add 1/2 to 3/4 cup salsa, some salt and pepper, and a can of black beans and heat well. Serve over green salad with onions and whatever other vegetables you'd like, the secret ingredient is balsamic vinegar...drizzle some on before you put on the meat. Add some non-dairy sour...
  21. Oh, no! So THAT's why I mysteriously gained 10 pounds since I went on the Chocolate Cake Diet....man, what a let down! LOL...that post had me going for a second there, too. Chocolate cake in 3 minutes....AND it's calorie free? Shucks, too good to be true!

  23. LOL...It's 'cause I'm lazy! I figure, I spend about a billion hours writing recipes on my blog, then I come here and write some, plus I'll sometimes post stuff on other sites. That adds up to about two or three billion hours a week writing down recipes! Ok, so maybe I'm exaggerating just a wee bit. It also has something to do with the fact that the pumpkin...
  24. Hey, guys! I'm loving all these variations and different experiences with the 3 minute cake. Just wanted to add, I picked up some small silicone bundt (sp?) cake pans and the dollar store the other day. Seriously, they were a buck each. They are nuke-able, so I made the cake in the little mold....they pop right out and look like a perfect little mini...
  25. Forgot to add...I've use Midel chocolate chip cookies for a regular crust. Pretty good, if you don't mind a little chocolate in your crust!
