  2. I love Tinkyana (sp?) noodles. I like the spiral kind the best for this, but you could also use the shell noodles. All of Tinkyana's pasta turns out great, I think it's the closest to the 'real thing' and it can withstand a little over cooking and still not turn into noodle pudding!
  3. This week's menu (a little late). A pretty normal menu this week, except that we'll have friends over on Saturday.   5. I have the exact same reaction! If I get glutened (even a tiny amount) I get tiny little clear blisters on my fingers. They itch at first and hurt like crazy and are very deep. Then, the blisters pop and leave little holes, and if I have lots of them in the same place my skin will crack where they were and really hurt. I hate it! I used to have this...

  10. I'd love the recipe! I make most of what we eat, so homemade bread and jam are staples. We have peach trees, and as I type my kids are mashing peaches for yet another round of jam (5 dzn quarts of sliced peaches in apple juice are lining my counters...yipes!). Branching out in the jam department would be great LOL! We also do a lot of hard boiled eggs...
  11. Sadly, count me in! I was always on the thin side until I had my 3ed baby. I had surgery right after her birth, and my health just went downhill! I think I may have had celiac's or at least some nasty food intolerances before that, but they got 100x worse after. I gained quite a bit of weight...I don't know how much but I bet at least 20 lbs. I craved...
  12. Any ideas for snack foods and meals that are very high in calories and good fats but free of gluten, soy and dairy? My son is so darn skinny and he isn't growing as fast as he should be. He also has acid reflux disease and can't eat big meals at one sitting, so I have to think of ideas to get him to eat throughout the day. We're also on a tight budget...

  15. I got this recipe via email from my stepmom, it called for regular flour and milk but I messed with it and came up with this gluten-free/Dairy free variation. I can't believe it!!!! Toss the ingredients in a mug, mix them up, and nuke it for 3 minutes. I thought it would be marginal at best, but it was REALLY GOOD and it seriously only took 3 minutes!...

The ingredients kinda make me want to barf (pretty much every form of "Corn Syrup" known to man...) but there was no dairy or soy listed...so it *looks* safe.   18. For those of you who are also lactose and/or soy intolerant...guess what? I just made an excellent mocha latte with *Almond Milk*! I had the plain kind and mixed it with chocolate syrup, then frothed it. It froths up fluffier and foamier then regular milk even, and it tasted great! I am so excited...

  22. Yeah, I love Ians but the are sooo spendy! Another idea that might work well for you (I assume it's just you and possibly a hubby?) is to roast a whole chicken and make nuggets with the left overs. We've done that before, but we had to roast 2 chickens for a family of five to have enough left over for the nuggets.

  24. Yeah, Redbridge is the least expensive and easiest to come by. I had one another one awhile ago...it was a microbrewery and had the word "dragon" somewhere in the name. That's not helpful...sorry....Redbridge is probably the best, esp. for cooking!

This week I got a late start because of the holiday, and then we are spending the week getting settled into a routine for home school, cleaning up the house and organizing everything (I'm calling this "Inservice"....regular schools do it, so why not?). I also am still up to my eyeballs in peaches, and looking at 2 more trees on the verge of being ripe......
