    I'm looking for a good substitute to make sausage balls. The recipe I used in the past was 1 lb sausage, 2 cups cheese and 2 - 3cups bisquick. I've used Pamela's baking mix and it tastes okay.     I think after diagnosis, everyone rushes out to buy cookbooks and bean flour! My suggestion would be to find one or two meal 'plans' that you really like and can do easily.     mygfworld, obxmom is right. Celiac Disease affects a child's ability to learn and qualifies for a 504. You may have to push a little bit, but it's absolutely do-able.
