  3. I have warm peach cobbler on my stove right now. I cant have so many things right now, but can eat this. My recipe is very simple: Crust: 1 1/2 cups almond flour 6 Tlb almond yogurt (could use any kind) Dash of salt 2 Tlb honey Mix all together and press into pie pan.   4. Along with B12...Your Vitamin D levels might be low. You can get them checked or it is perfectly safe to take 1000 - 2000 IU daily and GET SOME SUNSHINE which naturally relieves depression. If you are able.....a little exercise can go a long way too. Just a stroll if it is all you can muster.

  6. And you can buy popsickle trays and put the smoothie in there and freeze. Sometimes just a different presentation works. It did for my daughter often. My daughter hated zuchini until I roasted it.
  7. I make a roux with amaranth flour and olive oil for white cream sauces. I use arrowroot to thicken other things. I dont eat corn. The trick with arrowroot is that you should take a few tlb of the warm liquid from your dish (or warm water) and mix with the arrowroot to make sure it mixes well (no lumps) then gradually add it to your dish.

You can make them like french fries, bake them or boil and mash them. My daughter will eat "roasted" veggies....carrots, zuchinni, sliced and roasted until soft and lightly browned. I do onions...

  11. Im neg. for Celiac genes, but pos. gluten sensitivity. I have 2 gluten sensitivity genes according to Enterolab. But not the official Celiac genes.

  13. Yes, I am a recovered Bulimic. I craved gluten foods....pizza...donuts.... Gluten/Gliadin act as opiates in the brain. It is a drug and if you dont eat it for awhile (even a few hours) your brain screams for more. But like all drugs it does it's damage int the process.

  18. And yes....foods can cause seizures. I had mild seizures at night for a few months. I would wake up with a weird buzzy feeling in my head. I would be totally disoriented for a bit, not knowing where I was or what was going on. I couldnt speak. A strange taste in my mouth. It took me about 6 months to figure it out. Potatoes!!!   20. Genetic testing is not a be all end all. It can only show a propensity toward something. It cannot show who WILL get something and who WONT. Some researchers believe that DQ2 and DQ8 are not the only "Celiac Genes" and I suspect they are right. The genes you have sit right next to the DQ2 genes for Celiac. They are sister genes if you will. Gluten sensitivity...
  21. Get your adrenals checked! Adrenals first....then thyroid. If your adrenals are in the dump, you will not tolerate ANY thyroid meds.

  23. You will want to check out the "Island Bakery" on Siesta Key sometime. Gluten Free bakery with french bread that tastes like real french bread. They also have normal sized sandwich bread loafs that actually taste good and are light not dense. Take the kids. They have ice cream too. They will have a handful of things to sample (breads and goodies), but...
  24. Throw in some nuts and fruits if you tolerate them. Canned tuna.....canned chicken (but do read the labels). Sardines. Canned salmon. I dont know what is available at the stores there for pre-packaged stuff. Corn tortillas. Canned beans. Refried beans and corn chips. Make a taco salad.
  25. Hi Christina.....and welcome. You dont need a Dx to know that gluten is a problem for you. Congratulations on having the courage to try a gluten-free diet. Some cant even do it even tho they get a Celiac Dx. This is a great resource. Feel free to ask any specific questions you have. There are wheat free soy sauces like Tamari and some brands....
