  1. I agree with Susan's recommendation. It's a great web site and I've been going to it for years. Lots of help on the forums as well. Maybe, as a gift, you could give your friend Mary Shomon's book, Living Well with Hypothyroidism..it's great as is her newer book, Living well with Autoimmune diseases--however it doesn't go much into celiac disease but gives...
  2. Not sure if this should have been in the travel section but this seemed the more logical place. I'm going to be gone for 2 weeks and won't be near, that I know of, to many health food stores, that I can pick up a loaf of gluten-free bread from, and even then keeping it refrigerated would be a problem. I've considered trying to take a loaf of Mana from...
  3. Donna, I found the same problem, but have been able to get around it adding an extra egg, slightly whipped, more baking powder and either club soda or a sparkling mineral water for the liquid. I've even read where beating egg whites then folding them in will keep pancakes fluffy but I've never tried it. Kandee
  4. I don't post very often but this thread is just to much fun to resist. Not being a southerner but being married to a Georgia "Cracker" for almost 25 years I've had to learn a lot.....(the most recent being from reading the "Sweet Potato Queens" books where the 4 food groups are Sweet, Salty, Fried and Au Gratin...love those gals.) Love the transitions...
  5. Shirley, Sure..here goes..this recipe make a ton of balls and they keep well in the fridge, especially if you grate a little paraffin wax into the chocolate to create a shine so they don't "bloom" in the cold. Hubby has become so fond of these, since I made them at Christmas time, that I have them around all the time now. I make up a batch of balls and keep...
  6. Sharon--and then those baby formulas they are using soy in is proving to create thyroid disease in infants---then they have it for life. You were probably better off doing what you did, despite the out come..and how were you to know anyway? celiac3270--interesting research..this is where we want our dollars going. But right now? To eat one slice of...
  7. Hi Sally, I agree with Tina plus run free radio spots on the local stations. Try to get the newspaper to run the ad continuously. And ask a hospital dietitian to join you...they are sometimes in the know, but often are there for information too. As to location we asked the hospital to donate a conference room. They were more than willing if it...
  8. Jessica---yes, waiting was my thought too...this is a bit rushed for both the companies and me. Now there is more time to contact companies..and delegate who will bring what instead of having the bulk of the work on 2 people's shoulders.. Thanks again for the valuable list, and advise... Shirley---A big thank you for the recipe for the matrimonial cakes...
  9. Jessica, THANK YOU for contacting them again....Do you think it is to late for me to contact them about an April 19th meeting? If not, I'll email them this weekend so they can act on it next week. Our group is led by a CSA Resource person so we are valid, just not nationally registered. Funny what you said about samples. Last Oct. I was the contact person...
  10. Wow, thanks everyone. I never expected to get this kind of response. Karen, I so agree....CHOCOLATE RULES! Although I can't get the El Peto cake mixes here, I was thinking along the lines of brownies. The gluten free pantry truffle brownie mix (with chocolate chips in it) is to die for, plus I have a not-to-shabby recipe for one that is adapted from a...
  11. Where I live, High Desert region of Southern California we have a support group that meets now once every 6 months. We've only had one meeting and our next one is mid April. Since we have so many newly diagnosed celiac disease'rs, the leader (a celiac disease regional support person) and I will be bringing goodies to the meeting to help people see that...
  12. Good Question Donna, I don't have the answer, but was thinking the same thing myself today since I'm expecting company, and older man with a special needs diet...soft stuff...and was thinking he could have chicken and dumplings, but wanted to make it gluten-free so we all could have it. I hope our experts come to our rescue!!! Kandee
  13. Well, I'm going to give Manna from Anna a try, but for something already made up, I vote Kinnickinnick...........I had my first loaf recently and fell in love.. But would love to know if anyone has developed a knock-off recipe for it (the Italian Tapioca, I think it's called) since I have to drive 1 1/2 hrs to get it and then can't be guaranteed it will...
  14. Monica, You've gotten lots of good suggestions here, so I have nothing really to add other than to say the ultimate decision is yours and I'm sure it will come to you soon and it will be well thought out and a wise one. I wish you well, and good luck.............and hopes that I can get to Denver and load up on all your goodies!!! Let us know when the web...
  15. Laura, I ordered it so was anxious to try it right away when it got here, but I tried it making the balls (like tiny rolls) first. I added dried chives and some (but not all it called for) grated (really hard) good Italian Parmesan cheese (the kind you get in a block and grate yourself). They were awesome, and hubby, a non-gluten-free'r even loved them...
  16. Oh My Goodness Monica, I'm salivating as I read your post. You must be the only hometown gluten-free baker in the US(?) That's worth taking a trip to Denver in my book--and summers are delightful there! The first time a friend, who's hubby has celiac disease, baked me a loaf of gluten-free bread I was in heaven. I think 95% of why it tasted so great...
  17. Deby, (or is it Monica?) This is FABULOUS!!!!!!!! It just got printed out, saved in a file, and backed up on a disk!!! You'll never know how much I appreciate your attention to detail in the recipes for making the rolls and pizza crust. Often it is one little missing step, (like pre-mixing the salt and Xanthan gum into the flour), that make...
  18. Well, I certainly have some options to try here. Chebe, Amy's, Fenster's homemade, Nature's Hilights, Hagmans with some bean flour, and Sterks (thanks for the link since I'd have to order it on line). I did order some Chebe (original) because I not only want to give it a try as a pizza crust, but also want to try the other things made with it. Thanks...
  19. jknnej, I know what you mean about past failures. I got tired of them. What frozen bread dough are you using, the chebe? celiac3270, thanks again. I never thought about the cheese on top needing to be gluten-free...(I just thought they all were)...so I guess using Kraft is always safe. Now that you'll be able to have tomato sauce maybe you can get...
  20. Thanks celiac3270 for the link. I see that as it is you have to order 8 pkg. as the minimum, but if it's as versatile as they say, it's worth it. I didn't realize it didn't come with cheese already in it. That makes it nice. One could add some Italian seasonings in a pizza crust. I'm going to assume one pkg will make a small (12 inch) pizza crust but use...
  21. Jessica, I know EXACTLY what you mean about going to all that trouble to make pizza crust when you want a pizza NOW. I'll look into Amy's and see what all is in it. Soy I can't do..allergic-- but a little dairy is no problem. Only problem I have is a store that carrys Amy's is an hr and a half drive away..(sigh) celiac3270, Will try the Chebe bread...but...
  22. Yes Jessica, That is an enormous help. Just what I was looking for...A keeper for sure. Thank you so much.. My newest item I bought was Sassafras tea (instant) sassafrastea.com -and it listed carmel and natural flavorings. I wondered how to go about asking them about these. Is all carmel gluten based, or does it depend on the source as with "natural flavors...
  23. Hi, I'm sure there is one, and maybe even on this site, but I can't find a form letter you can send to food/drug manufactures online asking if certain products/ingredients they produce are gluten-free or not. I've written some and just came right out and asked if a product was gluten free, which obviously is not enough. Some answer me back, some don't...
  24. I looked through all the pizza crust recipes listed on this site (but can't tell a good one just from reading it), then through at least 20 back pages of this forum and no one has said what their favorite, tried and true recipe is for a fabulous pizza crust. I don't want a rice or potato one, just one that tastes the closest to the real thing. The ones I...
  25. Hi Melanie, Please post how long it took to get your test results from York, and I might add, what they were. Glad to hear it was no big deal taking the test. I didn't think it would be...probably much the way a diabetic tests their blood sugar. The IgE RAST test, tests only a few top known allergen foods (10 or 12, can't remember exactly) and it...
