I've found the Bob's Red Mill mix turns out very thick cornbread. Too thick for my liking, and it seems to have a stronger "xanthan gum" feel when you chew it, but it doesn't taste too bad. -

I've been curious about this bread machine. I have one I really like that doesn't have a gluten-free cycle but I don't usually do the entire cycle in it. I usually use it for dough or preserves. Do you think it's worth it to have one with a specific gluten-free cycle over one that doesn't? -

I never cared for Jiffy cornbread mix, so maybe I can't help you on that, but I do enjoy a good cornbread! I think our cornbread is so much better now gluten-free. I'm thinking that celiac won't get you out of it unless they don't let you bring your own meal. I'd explain that I couldn't eat the food provided and if that's a problem then I can't do it.

I just got accidentally glutened about an hour ago and am praying I don't have a bad reaction. I've been gluten-free since Jan. and have been accidentally glutened twice since then and felt terrible for about two days. This was from a present, of all things! His dr. didn't do a genetic test on him. They dx through I guess other blood work and also the biopsy. His numbers were really high in the blood work, but I know they didn't do a genetic test on him. Thank you for that, we'll consider it! My husband is the one who was just diagnosed, and he has no symptoms. His liver enzymes have been elevated for a few years and his father was Dx with celiac a few months ago. My husband got tested and came back positive for it. I don't think any other food allergies are a problem, but we'll keep it in mind. -

No, I haven't been tested. To my knowledge, no one on either side of my family has any issues with Celiac, although I realize that doesn't mean it's not there and misdiagnosed or something.
