I have been gluten free for around 2ish years. The first year was certainly harder than the second. Its all old hat now. You most certainly become more sensitive to small amounts of gluten after cutting it out of your diet. Cross contamination is a huge issue. Well I did what I said I wouldn't do, and that is to get "tested" further for Celiac disease. I meant to also ask if any undiagnosed problems got better, but to just notate whether or not you were diagnosed. Non of my mental health issues from the past were ever officially diagnosed, they are just my take on how I feel. -

I totally missed that you have autism when I first responded to your post. I know that there is a lot of talk about a gluten free diet helping with autism. Coupled with that however is also a casein free diet. Casein is a very similar to gluten. I think there just has not been enough research done in these areas. My take is that they are probably the same condition, but some triggering even caused the body to deal less well with the gluten intolerance, and celiac's then forms. -

Just hang in there. I had a lengthy withdrawal period and a relapse of some of the symptoms for a period of time. They have gradually gotten better. Keep up the diet and hopefully they will get better with some time. -

There seems to be some correlation between various autoimmune disorders and gluten intolerance including but limited to Lupus. If you ask a 100 different doctors you will probably get a 100 different answers on that subject. I do not believe they have done enough research into those problems to authoritatively tell you. My point being that it doesn't address the bodies inability to deal with the gluten, it only effects the bodies immune response to the gluten. Since celiac's cannot digest gluten as well as other people then the body has to deal with the gluten in some manner. First off, I don't know how much faith I would have in the Vaccine. It could only mask a deeper problem eliminating the immediate reaction. It could make gluten consumable without the IBS type symptoms, but making all the other problems worse. I have been getting some flours from Barry Farm off amazon. http://www.(Company Name Removed - They Spammed This Forum and are Banned)/s/ref=nb_ss_hpc?url=...amp;x=0&y=0 There website lists which flours are certified gluten free. I have noticed that all of the commercially available products all use xanthum gum. If they are indeed interchangeable wouldn't it make more sense for them to use guar gum? Guar gum seems to cost a fraction of what xanthum gum costs. -

Yes and no... a lot of the substitute foods are higher in calories, and you will start absorbing more of all the food that you eat.

I have seen several places on the web that talk about Psyllium Husk making the consistency of gluten free breads more closely approximate "real" bread. I have yet to try it out, but will be as soon as I get back from vacation. -

It certainly isn't your fault. I would place the blame squarely on the shoulders of those who did the cooking/packaging/selling. They may not know any better, but its still their fault. I would certainly address this issue at some point. Possibly even getting other local celiac's involved. -

Not by a doctor, but I am pretty certain I have it. If not Celiac's then Gluten Intolerance. The problems that have resolved since going gluten free, and the fact that when I accidentally eat gluten I have a reaction have convinced me to not eat it anymore. They did prick for wheat, and barley. I did not know this at the time, but went back and checked... -
Its just different. It isn't Jiffy or Merita. If you cooked them homemade bread they might think it tastes weird let alone the gluten free kind. The Pamela's pancake mix is really good. I have only tried the pancakes, I need to see what biscuits made with it are like.

Yeah I meant to change the topic, after I posted I decided that wasn't what I meant, but I couldn't figure out how to change it so I didn't. I had had a banana and a shake before going in so I don't think it was low blood sugar. If anything it would have been higher than normal. Needles don't bother me though. My tattoos didn't bother me at all...
