  1. I'm "lucky" because the damage was so severe by the time we caught it that I have to ask for help sometimes. And the deans, gods help them, had had me in their office way too often by the time we figured out what was wrong. If I hadn't been at the point where I could not function without narcotics when we figured out what was going on, I don't think I would...
  2. Oh god, I was so pissed off the first couple months. I didn't even realize that I was totally over being angry until tonight when a friend went, "Try this!" and I'm going, "Yeah, no, keep the malt beverage. Otherwise, you get to deal with me in the morning." And whereas even a month or two ago, my eyebrows would have been arched up off of my face (or nearly...
  3. Rice isn't a problem for everyone--so you should experiment to see if that's one of your issues. As for Miralax substitutes, one thread suggested benefiber. (I did a simple google search on miralax; it would probably be wise to do the same on benefiber. I'm too wiped today to do it for you.)
  4. See, we have a health center on campus, and on the really bad days, I go there so if I have to miss class or ask for an extension, I can honestly point and say "went to health center". I've also gone to the Dean's office more than once and explained what was going on. If I were you, I'd go to my dean or the disability office to talk to them. But I suspect...
  5. I've been playing with Karina's recipe this week, at least the sauce recipe. I mix together coconut milk (it makes the sauce thicker if you're doing stovetop mac-n-cheese), white wine, horseradish, stoneground mustard, tapioca starch, turmeric, and nutritional yeast. Unfortunately, I can only say "to taste" on any of those because I don't use measuring...
  6. Whoa. I'm certain you've already heard this on this board, but you have to be eating gluten when you do the biopsy. Your biopsies aren't going to be accurate if you've both been a month gluten free. The reason why I don't have a biopsy result to present to my school's dining people is that I can't add gluten back for the 90 days that it'll take to get an...
  7. I hate to break it to you, but while miralax says that it's gluten free, it still isn't safe for those allergic to wheat--therefore, you might still be doing damage to your system. (Sometimes, something has less than 20 parts per million, so the company can say it's gluten free, even if there's still gluten in it.) And I want reiterate what others have...
  8. Please do! I want to know if it's worth it to fork over the money next paycheck!
  9. Hmmm...I liked King Arthur worlds better than I liked Betty Crocker...
  10. I added dairy back soon after going off of gluten for the very last time (I was in the middle of an elimination diet), and it all looked fine. Until, about two weeks later, I couldn't figure out why I was still having migraines. And I just. kept. itching. My sister-in-law (who has to put up with oblivious in-laws) pried my fingers away and went, "Hey, moron...
  11. Could you explain the limited diet you're on? I know this is intrusive, but it's helpful for us to know why you're that limited. Because while allergy tests aren't always the most enlightening, they can be useful starting places. And I started out on an elimination diet; I'm down to only a few things that I definitely cannot eat from the several pages of...
  12. Also! I know you vetoed buffalo, but are there other game meats that you could eat? I know for me, when my body wasn't handling any form of farmed animal, I was able to eat caribou, elk, and deer.
  13. Stir-fries! Chicken + rice (or rice pasta by Tinkayada or rice noodles from the Asian aisle/supermarket) + any of the following: apples + broccoli + carrots + kale + any vegetable I am missing (I would recommend parsnips; they're flavorful and easy to pair with things) + sauce---not certain what would work for you, so here are suggestions: lemon juice; white...
  14. My body went haywire for several months, calmed down, and then...well, I backslid. And the past two months, even though I'm back to be completely gluten free, it's still a little bit "off"--including what you're describing. I've figured out that, for me, this is how my body makes certain that it's no longer toxic. It's annoying, but it's its healing process...
  15. I am really, really glad that it looks like it's working. Hopefully, it keeps working.
  16. Probably something similar to how I went 10 years between it being noted in my chart and someone actually realizing that, "Huh. There's a notation for celiac in your chart." "Yeah, I was eight. They treated it for a while, but it went away." "Why aren't you still gluten free?" "Am I supposed to be?" Mostly, I'm convinced that doctors don't...
  17. Which I realized when I was a little more awake. It's been a long day and I didn't mean to come off as a jerk.
  18. Because I break out in hives and the symptoms have been worsening, there was no way my doctor was going to let me grab the one that had dairy in it. And while I did run across the info that it wasn't a massive deal for intolerant folks, I figured better safe than sorry.
  19. I spent this morning running between my doctor and the pharmacy. And googling. Why, you ask? Because I'm going back on asthma medication and because since I've been okay (not great, but not dead) being off of meds for four months, it's been decided that we can switch down from a combo to a straight inhaled steroid. Do you know that some genius out there...
  20. ...That's because glucose syrup means "sugar syrup", literally. It's usually synonymous with corn syrup. Glucose and gluten are not the same thing--one's sugar, one's a protein; one's derived from corn or sugar, the other from wheat, rye, barley, etc.
  21. I have a question: What brand is it? What are the ingredients? Because I have really severe reactions to peanut butter that has soy in it (admittedly, I'm soy intolerant, but it's something that we figured out only after I went gluten free)--to the point that I buy completely organic peanut butter or specialty peanut butters.
  22. I can't stress enough that it would be wisest to go off of soy and dairy as well to begin with. I didn't until the hives (from dairy) showed up, and unlike many who end up being able to go back to dairy, it looks like my issues are here to stay. I love Mochi as well--do you have a recipe for it or do you buy it in sheets? (I bought the sheets for a while...
  23. Keep pushing the administration--they have to provide accommodations, even if blood tests are negative. Find one doctor who can write her a note and that can be used as a way to force the issue with your administration. I have celiac, but my original tests were lost years ago; my admin said, "Oh, we have no reason to let you off the meal plan." My response...
  24. I went gluten free right before the start of the school year--I live on a residential campus where there is no concept of commuting and where the higher ups in admin believe that everyone should eat in the dining halls. My friends and I started keeping charts; I never managed more than a week without the folks in our dining hall either forgetting to mark...
  25. I know that buckwheat's grown on me over the course of the past 9 months, but when I first made the choc chip cookies...I was *not* a fan. My test tasters didn't mind them, but they definitely weren't the tastiest thing that I've made from Karina's site. It's interesting because I really do think that's the only one of her recipes that I haven't flat out...
