ARCHIVED Needs Family Meal Ideas; There's a Catch
AKcollegestudent replied to elle's mom's topic in Gluten-Free Recipes & Cooking Tips
Tacos. Hands down, my easiest meal to make. Corn tortillas (or rice tortillas, though I haven't found them around my area in a while), a gluten free taco mix, hamburger, and then you can use tomatoes, salsa, onions, rice cheese if you actually like it (I don't. I find it vaguely appalling.), rice, beans, corn---really, the sky's the limit. Stir fries are... -
ARCHIVED Am Not Sure What Is Going On...
AKcollegestudent replied to momxyz's topic in Coping with Celiac Disease
Oh, that information about Pantene's products is *special*. As someone who actually reacts fairly badly to fragrances in general, especially those that contain gluten, I'm so glad that I went off of Pantene after less than a week. And do they comprehend that if the fragrance contains gluten and the formula gets in our mouths--which it will eventually--there... -
ARCHIVED Celiacs Get Paid $500 For A Plasma Donation
AKcollegestudent replied to Edo's topic in Coping with Celiac Disease
I'm a starving college student, so I figured that I might as well submit my form. (Doubt I'll get approved, but hey, what can it hurt? And if this does work, I might even have enough money to buy the bicycle I really, really want. The one that I wasn't able to buy last year because joint pain + mountain biking don't mix.) -
ARCHIVED Gluten Free Dairy Free Chicken Broth
AKcollegestudent replied to Christina98's topic in Gluten-Free Recipes & Cooking Tips
I agree with Patti--Pacific Foods' chicken and beef broths are the ones that I choose. I started using them long before I went gluten and dairy free because they tasted fantastic and was very pleased when I realized I wouldn't have to find a new brand. -
ARCHIVED Which Is The Better Brownie?
AKcollegestudent replied to *lee-lee*'s topic in Gluten-Free Recipes & Cooking Tips
When it comes to mixes, I've had better luck with GFP. That said, I really, really love Karina's brownies at glutenfreegoddess. I've tweaked that thing time and time again. (With fantastic results and no whining from the gluten (and dairy) eaters.) -
ARCHIVED Substitution For Oats In No-Bake Cookies?
AKcollegestudent replied to ksangie's topic in Gluten-Free Recipes & Cooking Tips
...Because I'm in the middle of abso-freaking-lutely nowhere during the school year, I didn't think of these suggestions (nor would I be able to find them) when I hit upon a "it works" solution for my no dairy, gluten, or soy self: peanuts. I either use crunchy peanut butter or pulse peanuts once in the food processor. Simple and effective. As an aside... -
ARCHIVED Peanut Butter Cookies With Almond Butter?
AKcollegestudent replied to Nor-TX's topic in Gluten-Free Recipes & Cooking Tips
No additional ingredients are necessary--I've played with the amount of white sugar, whether brown sugar works, if I can use agave or honey or stevia, and I haven't had a single problem with any variation. However, I would caution against the cashew butter cookies--while I like the almond butter variation, the cashew butter variation doesn't have a whole... -
ARCHIVED New Symptoms - I'm Concerned
AKcollegestudent replied to tmbarke's topic in Coping with Celiac Disease
I still suspect that Wellbutrin was what originally triggered celiac symptoms when I was a kid; unfortunately, I cannot compare my experience with yours because I was a) between the ages of 7 and 11, on it for depression and to medicate mood (it made me calm, and the shrink found it better than adding ritalin), and c) I was on staggering doses for a prolonged... -
ARCHIVED I Don'T Know If I Can Do This...
AKcollegestudent replied to Nightingale8472's topic in Coping with Celiac Disease
Good luck. However, if you are gluten intolerant or have celiac, there are other issues that are often discovered as you heal--especially dairy intolerance and soy intolerance. Those are the two most common; other issues include nuts, yeast, and/or nightshades. Obviously, the first step is to see if this works for you. (And it might not, realistically... -
ARCHIVED Well Xanthan Gum Is Out
AKcollegestudent replied to sandsurfgirl's topic in Coping with Celiac Disease
Just grabbed the mixes I've got and sure enough, the Cravings Place mixes I keep, as well as Gluten-Free Pantry's brownie mix all have xanthan gum in them. However, Gluten-Free Pantry's French Bread and Pizza mix? Has guar gum and not xanthan gum in it. So that might be something? -
ARCHIVED So What Beauty/Heath Products Are Safe?
AKcollegestudent replied to Sunshine24's topic in Coping with Celiac Disease
I was a Redken girl for years; I can't use Aveda because there's something in it that just screws with my head and causes migraines. But Matrix(also known as Biolage) sells Sleek.look which is a fabulous salon product that handles my easily damaged, wavy, cranky, colored hair with no problem. (And according the the poor girl who had to deal with me for 4... -
ARCHIVED Have Casein Intolerance Also - Should I Eat This?
AKcollegestudent replied to CGally81's topic in Coping with Celiac Disease
I'm dairy-allergic (hives, the whole nine yards) and casein intolerant. My casein intolerant issues are partially similar to my gluten issues (neuro issues, pain, and screwed up internal issues), and partially just utter exhaustion which is definitely just my body on casein. I've never had a problem with the Pamela's brand cookies that have trace amounts... -
ARCHIVED I Don'T Know If I Can Do This...
AKcollegestudent replied to Nightingale8472's topic in Coping with Celiac Disease
There are people out there who don't like buffalo, and I just cannot understand them. Give me buffalo, caribou, or moose any day of the week and I'll be a happy twenty-something. I still suspect that my parents were willing to start hunting themselves just so that there'd be game meats when I was a kid--I was a picky eater and moose was one of the few things... -
ARCHIVED I Don'T Know If I Can Do This...
AKcollegestudent replied to Nightingale8472's topic in Coping with Celiac Disease
That's exactly what I did--mine started when I was fifteen (about the same time as my appetite disappearing), but they got significantly worse freshman year of college. My pain scale when the tension headaches, migraines and rebound headaches finally went away was terrifying--one of my doctors has the "normal" pain scale hanging in his office. When we compared... -
ARCHIVED Progresso Creamy Mushroom Soup
AKcollegestudent replied to momofcdson's topic in Coping with Celiac Disease
Has anyone considered the possibility that there are going to be both gluten free and gluten filled versions of this soup floating around? The way this is reading to me is that they're redoing the recipe to have gluten in it, or it's been moved to another factory that doesn't have dedicated lines. The cans that are out there have gluten-free on the back;... -
ARCHIVED I Don'T Know If I Can Do This...
AKcollegestudent replied to Nightingale8472's topic in Coping with Celiac Disease
I used to write myself post-it notes to remind myself to eat. Every single meal, every day for five years, from fifteen until two weeks after I went gluten free. Forget snacks; half the time, what I was eating was less than a snack-sized portion anyway. I don't write post-it notes anymore; I don't need to. I was ravenously hungry for the first time in mid... -
ARCHIVED Is Gluten Free A Cure All?
AKcollegestudent replied to bluebonnet's topic in Coping with Celiac Disease
For me, it's a semi-cure all. Going gluten free helped with my joint pain; I still have bad days, but good days are no longer an endangered species. But I also had to go soy and dairy free. Soy free looks like it's here to stay; dairy free is definitely cow-dairy free, and limited goat-dairy. And I've been gluten free since May; I consider there to have been... -
ARCHIVED Celiac Disease Discrimination

I'm in the middle of something similar at my school--thanks for at least giving me an example to follow. -
ARCHIVED Well Soy Is Out
AKcollegestudent replied to sandsurfgirl's topic in Coping with Celiac Disease
I almost react worse to soy than I do gluten, despite the fact that gluten affects me more in the long run. I am lucky--in very small amounts, I can handle soy lecithin. But anything else, including soybean oil? Migraine, fuzzy head, and all that fun stuff. -
ARCHIVED Need Pasta Ideas.
AKcollegestudent replied to Juliebove's topic in Gluten-Free Recipes & Cooking Tips
I've gone nightshade free again, so I'm having to rethink pasta as well. I've added it to salad recently--I keep spinach and arugula in the fridge, add the pasta, some form of meat or garbanzo beans, and a bit of a mild goat cheese that I've been tolerating well. (No hives or any of the other symptoms.) But even without the goat cheese, adding Bolthouse Farms... -
ARCHIVED No Flour Peanut Butter Cookies
AKcollegestudent replied to sandsurfgirl's topic in Gluten-Free Recipes & Cooking Tips
I've been making variations of this since I went gluten free (again) nine months ago. And it's decent with honey or agave--I've used both. There isn't quite the crunchy shell that some versions of this have. (Those versions say that you should roll the balls in sugar before pressing them down.) My current favorite version involves mixing dark chocolate... -
ARCHIVED Birthday Cake Recipe?
AKcollegestudent replied to AKcollegestudent's topic in Gluten-Free Recipes & Cooking Tips
However, when the ingredient is sour cream, things become a bit more complicated. (I keep both coconut and rice milk in my pantry and use them when necessary. I have for many more years than I've been gluten free.) -
ARCHIVED Birthday Cake Recipe?
AKcollegestudent replied to AKcollegestudent's topic in Gluten-Free Recipes & Cooking Tips
Thanks to everyone who has replied--I've gathered up all the responses and forwarded them on to he-who-volunteered. He's going to make a decision and let me know which I get for a birthday cake when we go shopping for ingredients. They all sound fabulous, though several would definitely require at least benedryl. (Which means they'll get used as "yes, I know... -
ARCHIVED What Do You Do.....
AKcollegestudent replied to 1morething's topic in Coping with Celiac Disease
I did the same thing while I was home, so I have empathy for your daughter. I use CharcoCaps--I buy them at Rite Aid; I attempted to use regular charcoal supplements while I was home and it just didn't work as well. But it's very much I have to take the caps right after I think I've been affected; I'm lucky in that I can tell that something's happened quickly... -
ARCHIVED Birthday Cake Recipe?
AKcollegestudent posted a topic in Gluten-Free Recipes & Cooking Tips
I turn 21 in less than a week; one of my friends has agreed to make the dessert (using my ingredients, my cookware, and my kitchen under my supervision) so that for once I don't have to be actively cooking. I have a couple recipes (from Karina at glutenfreegoddess) that will work, but to be honest? I don't want a flourless chocolate torte or something...
